Prep fajita seasoning. Either mix together all the chicken fajita ingredients from the Sip Bite Go recipe listed on this recipe, or use store bought fajita mix.
Prep fajita chicken breast meat by mixing it all over with fajita seasoning. We like to get in there and massage it into the chicken meat with our hands. Set seasoned fajita chicken in the fridge until it’s time to griddle fajitas.
Preheat Traeger Flatrock, Blackstone Grill, or whatever indoor griddle or outdoor flattop you’re using to medium-high heat. For this particular recipe, we like to heat all the burners and add specific ingredients to each section. The onions and peppers take up 1-2 burner areas, and the chicken breast takes up about 1 area.
Start griddle cooking fajita vegetables first. To do this, add cooking oil or butter to coat the griddle and then drop the peppers and onions onto the heated griddle. Flip them around and season with salt and pepper.
