Preheat Traeger Flatrock or Blackstone or whatever griddle you’re using to high heat.
Prep ribeye steaks for griddling. Pat ribeye steaks dry with a paper towel and season with your favorite dry rub. Allow seasoning to adhere to the ribeye steaks for 15 - 20 minutes at room temperature.
Griddle Steaks. Once preheated, add avocado oil (really any fat, we used leftover bacon fat) to the griddle. Place ribeye steaks onto the griddle laying away from you so you do not splash hot oil on yourself.
Cook steaks for 4 - 5 minutes then flip and continue cooking for another 4 - 5 minutes.
Sear the sides. Before removing the ribeye steaks from the griddle, be sure to sear the sides for 30 seconds.
Remove griddle ribeye steaks. When the internal temperature reaches 130 degrees F as measured with an internal read thermometer for a medium-rare to medium finish.
Finish ribeye steak. Rest steaks for 10 - 15 minutes then slice and enjoy.
