Prep burger slider meat. Add ground beef to a large bowl and gently break up the meat with your hands or a spoon. Add salt and pepper and gently mix together all ingredients.
Separate the burger meat into 4 to 6 slider patties (they’ll be about 3 or 4-ounces each). To shape them: form each one into a large meatball, then flatten the burgers to about 1.5-2” disc shapes. If desired, push down the center of the burgers, which might help them stay on the bun better, although these are great for serving with toothpicks.
Store slider patties in the refrigerator until 5-10 minutes before cooking them.
Cast iron cooking sliders on the stovetop with oven finish
Preheat oven to 350 degrees F.
Preheat cast iron skillet on the stove to high heat. Add oil.
Once oil is hot, add sliders to the skillet.
Sear sliders in the hot pan for about 45 seconds to 1 minute on each side, until they are just browned on the outside. NOTE: While you can cast iron sear sliders until done, I recommend finishing them in the oven so they cook more evenly throughout. If you’re going to cast iron sear them, keep flipping until they are done, so the outside doesn’t burn.
Add cheese to sliders. You want the cheese on the sliders before they go in the oven, so the cheese melts.
Transfer sliders to the oven and bake for 1-3 minutes, until the desired internal temperature is reached. For medium-done sliders, cook them until the inside reads about 145 degrees F as measured with an internal read thermometer.
Finish and serve in slider buns with your favorite burger condiments.
