Prep a 9x13 rimmed sheet cake pan (3-4 inches high on the side). I like to put down parchment paper and then spray it with cooking spray or grease the baking pan with butter.
Melt milk and butter together. Add the stick of butter and milk to a saucepan or skillet with a rim set to medium-high heat. Once butter is melted, turn off the burner. You don’t want the milk to start bubbling. Set aside.
Mix the smoked cake batter together in a large bowl. First, beat the eggs with the mixer together at high speed. Then add sugar and beat together, until smooth and combined (on high speed). Add flour and beat together again (on high speed). Next, sprinkle baking powder on top of the cake batter. Then pour the melted milk and butter mixture over the top of the baking powder. The mixture will start bubbling on its own (I forgot to tell you this is a magical experience… when it “activates” it becomes alive!!). Once the mixture is done bubbling, a couple minutes later, blend it together with the mixer on low speed until combined. Finally, add lemon juice and vanilla extract and mix together on low until combined.
Pour smoked cake batter into the cake pan. Top with diced pineapple.
Smoke cake at 350 degrees F for 45-60 minutes. Cake is done smoking when a toothpick inserted comes out clean. The edges of the cake will be browning and peeling away from the edge of the cake pan. Remove from the smoker and set aside.
Make the brown sugar topping by adding the butter, brown sugar and cinnamon to a pan on the stove on medium heat. Melt together, stirring regularly with a whisk, until the mixture thickens and coats the back of a spoon. Pour on smoked cake.
