Instructions
Preheat Traeger Grills or Pitt Boss or whatever pellet grill you’re using to 225 degrees F.
Assemble smoked red potatoes side dish in a cast iron skillet. In a large mixing bowl or directly in a large cast iron skillet, add red potatoes, red pepper, shallot, and garlic. Drizzle with olive oil. Sprinkle with salt and pepper. Mix together to season potatoes and vegetables all over. Add everything to a large cast iron skillet, if not already, and toss diced butter on top.
Smoke red potatoes for 2-3 hours until potatoes are fork-tender to your liking, stirring every 30-60 minutes. Just put the cast iron in the smoker and close the lid.
Remove from the smoker and finish red potatoes with a sprinkle of chives. Serve when cool enough to enjoy.
