Mix all crouton ingredients together in a large bowl. Spread onto a parchment paper lined baking sheet and bake in the oven at 400°F for 10 minutes, or until lightly browned and toasted. Set aside.
How to make chicken breast with everything bagel seasoning
Prep chicken breast. Butterfly the chicken breasts to make them about 1-2” thick. This means, spread them out on a cutting board, and slice them in half to make them about half as thick. Season chicken with everything bagel seasoning blend.
Sear and simmer chicken breast in the pan. Turn a large pan on the stove to to medium high heat. Add olive oil. When oil is hot, add everything bagel seasoned chicken breast. Sear for 3-5 minutes on each side, until they are lightly browned. Add chicken broth, and add a lid. Simmer for ~5-10 minutes until the chicken reaches 165 degrees F as measured by an internal temperature read thermometer.
Add liquid (a little more water / broth) as needed. The liquid in the pan should reduce during this time, but if the liquid is completely gone and the chicken isn’t cooked through yet, add a little more water (2-3 tbsp at a time), until the chicken is cooked.
Rest and slice. Once done, turn off the burner and let chicken rest in the pan about 10 minutes before slicing. This will help the juices stay in the chicken.
How to grill romaine lettuce
Slice romaine heads of lettuce in half, lengthwise so it stays intact but becomes two pieces. Secure halves together with toothpicks if needed. Brush cut sides with olive oil. Sprinkle it with salt and pepper.
Heat a grill pan or BBQ grill to medium high. Once hot, add lettuce, seasoned side down. Move the angle of romaine lettuce halfway though, if desired, to create perpendicular grill marks. This will take about 10 minutes. My preference is to only grill the sliced side, but you can grill romaine lettuce on both sides if desired.
How to make the pesto dressing for grilled romaine
Whisk together ingredients for salad dressing (pesto, diced marinated red pepper, vinegar).
Assemble salad with lettuce, sliced chicken, carrot ribbons, croutons, dressing, and a sprinkle of parmesan cheese.
