Crispy Oven Baked Chicken Thighs Without Marinade Recipe | Sip Bite Go

1.5lb chicken thighsabout 3 bone in chicken thighs - substitute boneless
2tbsp olive oil
1 tsp garlicminced
1 tbsp lemon juicefresh
½ tsp salt
⅛ tsp pepper
⅛ tsp paprika
1tbsp rosemaryfresh needles
For the crispy chicken thighs glaze
1tbspmustard dijon
1tbsphoney
For serving (optional)
½mediumlemonslices
2tbsproasted red pepper(marinated from the jar)
Instructions
Preheat oven to 400 degrees F. Set out a large oven safe baking dish. Pat chicken thighs dry with paper towels.
In a large bowl, whisk together the chicken thigh seasonings (olive oil, garlic, lemon juice, salt, pepper, paprika, and rosemary). Add chicken to the liquid and toss it to coat it evenly. (Note – You do not have to marinade chicken thighs in this recipe, but if you are meal prepping and making this ahead of baking, you can marinade the chicken in this liquid.)
Transfer chicken thighs to the baking dish (skin side down) and add liquid from the previous step to the bottom of the pan. (This will help keep chicken thighs juicy as they cook.)
Bake chicken thighs in the oven, uncovered, at 400 degrees F for 25 minutes, then flip and bake for an additional 10-15 minutes or until the internal temperature reaches 165 degrees F with a meat thermometer. (The total time for baking chicken thighs shown in the Sip Bite Go demo was 35 minutes.)
While the chicken thighs roast in the oven, make the honey mustard glaze. Whisk together mustard and honey.
When chicken reaches the safe internal temperature of 165 degrees F, turn the oven broiler to high. Brush honey mustard glaze on baked chicken thighs skin and broil the chicken on high for 3-5 minutes until golden brown and crispy.
Let chicken thighs rest 5-10 minutes, garnish with lemon slices and roasted red pepper if desired, and serve.
