Garlic roasted fava beans are a healthy snack or side dish. Roasting fava beans brings out a rich flavor. Perfect for a vegetarian appetizer. Let’s bake them!
1.5lbfava beanswhole in pod, washed and dried thoroughly
2tbsp olive oil
½ tsp salt
¼tsp garlic powder
½ tsp sesame seedsoptional, for serving
¼lemon wedges (optional, for serving)
Instructions
Preheat the oven to 450 degrees F. Set out a large rimmed sheet tray with parchment paper.
In a large bowl, whisk together olive oil, salt, and garlic powder.
Add thoroughly dried fava bean pods to the large bowl and use a spatula to toss and coat them in olive oil seasonings. Transfer fava bean pods to the baking sheet and cook at 450 degrees F for 20 minutes. Flip, rotate pan in the oven (for even baking), and cook fava bean pods for 10-15 more minutes, until you can very easily pierce through the inside beans with a fork. The outside of the fava bean pods will be charred and brown. This is perfect.
Transfer to a serving platter and serve with a sprinkle of sesame seeds and lemon wedges to squeeze on top. Add any additional amount of salt you’d like as well. To eat them, squeeze out the beans from the pod and discard the pod.
Notes
Make sure to completely wash beans and dry them with paper towel before roasting them, so they get extra crisp.
You don’t need to cut the ends off fava beans before roasting them.
