2.5 cupsTrader Joe’s cauliflower ricefrozen or fresh (1 bag)
2tbsp water
3tbsp cilantro, fresh chopped
1tbsp limefresh juice
1tsp zestzest
¼tsp salt
Instructions
In a small frying pan, add butter and garlic. Saute on medium or medium-low, stirring constantly until the garlic becomes translucent and fragrant, but before it starts to burn. Remove from heat. At the same time, or right after, move on to the next step.
Add Trader Joe’s cauliflower rice (from frozen or fresh) to a large pan on the stove on medium heat with 2 tbsp of water. Cook, stirring occasionally, for about 3 minutes. Frozen cauliflower may take an additional 30 seconds. Check to see. You don’t want cauliflower rice that is mushy or soggy, it should be soft but still have texture and the water should cook out. Turn off the burner, but keep the pan on the stove to add in the cauliflower mixins.
Add garlic butter, cilantro, lime juice and zest, and salt. Toss to combine and serve immediately.
