When sous vide bath is ready, add eggs (in shells) and sous vide at 194ºF for 9 minutes. When done, transfer eggs to an ice bath to stop the cooking process for 5 minutes. Peel the eggs and slice in half or leave whole for plating. Smash avocado meat in a bowl.
To serve, add smashed avocado to toast, top with one egg each toast. Add a sprinkle of garlic salt and pepper, plus a dash of hot sauce. Garnish with parsley.
