Lobster Tails on the Griddle

1. Using kitchen shears, butterfly the lobster tails and rinse the exposed meat under cool water

2. Combine butter, spices, and freshly chopped parsley in a sauce pot. Melt until combined over low heat

3. Over medium heat place butterflied lobsters onto the griddle. Add a little water and cover with a steam dome

4. Cook lobster tails on the griddle for 5 - 10 minutes until done. ~135 - 140 degrees F internal temperature

5. To finish, pour the melted butter over the cooked lobster tails
