    INGREDIENTS

    • 4 cups diced watermelon
    • 4 cups spring greens lettuce mix
    • 1 medium English cucumber, peeled, seeds scraped out, and thinly sliced
    • 8 medium cherry tomatoes, halved
    • 2 teaspoon olive oil, spray
    • 2 teaspoon balsamic glaze
    • ¼ teaspoon salt
    • ⅛ teaspoon black pepper
    • 4 teaspoons crumbled feta cheese
    • 4 teaspoons crushed pistachios
    • 4 fresh mint sprigs

    For extra summer vibes, serve with this watermelon cucumber gin cocktail.

    HOW TO MAKE A WATERMELON APPETIZER SALAD WITH CUCUMBERS, FETA & PISTACHIOS

    The Gist: Assemble everything on the plate in sections, add fresh toppings, drizzle with dressing, season, and finish with a simple garnish.

    Step 1 – Arrange the Watermelon: Set out 4 appetizer plates and place 1 cup of diced watermelon on half of each plate.
    Step 2 – Add the Greens: Divide the spring greens evenly among the plates (1 cup per plate), placing them next to the watermelon.
    Step 3 – Top with Veggies: Spoon sliced cucumber over the greens on each plate. Add halved cherry tomatoes on top.
    Step 4 – Dress the Salad: Lightly spritz the veggies on each plate with olive oil and add a drizzle of balsamic glaze. Sprinkle the veggies with a pinch of salt and pepper.
    Step 5 – Finish with Toppings: Sprinkle each watermelon appetizer salad with crumbled feta and crushed pistachios, letting it fall over both the watermelon and greens section.
    Step 6 – Garnish and Serve: Top each salad with a fresh sprig of mint. Encourage guests to tear it up and mix it into the salad before eating for a burst of freshness.
