- 4 cups watermelon diced
- 4 cups spring greens lettuce mix
- 1 medium English cucumber peeled, seeds scraped out, and thinly sliced
- 8 medium cherry tomatoes halved
- 2 teaspoon olive oil spray
- 2 teaspoon balsamic glaze
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- 4 teaspoons feta cheese crumbled
- 4 teaspoons pistachios crushed
- 4 mint leaves fresh
Instructions
- Arrange the Watermelon: Set out 4 appetizer plates and place 1 cup of diced watermelon on half of each plate.
- Add the Greens: Divide the spring greens evenly among the plates (1 cup per plate), placing them next to the watermelon.
- Top with Veggies: Spoon sliced cucumber over the greens on each plate. Add halved cherry tomatoes on top.
