Since Butterkäse can be hard to find, I choose to use both mozzarella and butter which turns out perfectly every time.
Other cheese swaps include Havarti or Fontina.

Viral Sweet Potato with Cheese Recipe Hack

Ingredients
- 2 sweet potatoes
- ½ tsp olive oil spray
- ½ tsp kosher salt
- 4 tbsp salted butter
- 2 oz mozzarella from a block, not string cheese
- ¼ tsp sea salt flakes, optional
Instructions
- Preheat oven to 400°F. Poke holes in the sweet potatoes, lightly spray with olive oil, sprinkle with salt, and place on a parchment paper–lined baking sheet.
- Bake for about 50 minutes, or until tender—test with a fork.
- Once cool enough to handle, cut off one end of each potato. Use a knife to carefully poke a hole lengthwise inside the potato to make room for the stuffing.
- Cut one long piece of butter and place it directly on top of one long piece of mozzarella. Sprinkle the butter with a few sea salt flakes if using, then push the butter-and-cheese combo into the potato.
- Let the butter and mozzarella melt inside the hot sweet potato. Eat while warm—the cheese will firm up as it cools.
