    I finally gave in and tried the viral 2-ingredient Biscoff cheesecake — fully expecting it to be one of those internet desserts that looks better than it tastes. But this one genuinely surprised me. Creamy, lightly sweet, and closer to a real cheesecake than it has any right to be.

    Made with Greek yogurt and Biscoff cookies, this no-bake dessert couldn’t be easier. I like to turn it into mini cheesecakes with a cookie crumb base and fresh strawberries on top, which makes it feel extra fresh and intentional.

    If you’ve been curious but skeptical, this is the version worth trying.

    Here is what you need for each serving…

    • 5 oz Greek yogurt (strawberry, or any flavor you like)
    • 3 Biscoff cookies
    • 1 large strawberry, fresh, diced (or any fruit you love)
    • 1 tbsp whipped cream, optional

    Another version of this viral cheesecake recipe to try is the coffee flavor. Mix a shot of espresso in with vanilla greek yogurt. Add your Biscoff cookies, top with a dusting of espresso and chill until ready.

    HOW TO MAKE THE VIRAL CHEESECAKE RECIPE WITH BISCOFF COOKIES

    Here’s the step-by-step recipe (2 ways)…

    You can make this right in the yogurt container or assemble it in a small dessert bowl.

    Option 1: Assemble in a Mini Dessert Bowl (My Favorite)

    Step 1 – Crush 1 Biscoff cookie and add the crumbs to the bottom of a small dessert bowl or dish.
    Step 2 – Spoon the Greek yogurt on top of the cookie crumbs.
    Step 3 – Cut the remaining Biscoff cookies into pieces to fit the height of the dish, and gently press them into the yogurt, leaving about 1 inch between pieces. Top with diced strawberries.
    Step 4 – Cover and chill in the fridge for a few hours or overnight.

    Step 5 – To serve, top with whipped cream if desired.

    De-licious!

    Option 2: Assemble Right in the Yogurt Container

    1. Cut 1–2 Biscoff cookies down to the size of your yogurt container.
    2. Gently press the cookies into the yogurt, leaving about 1 inch of space between each piece so they soften evenly. Add diced strawberries on top.
    3. Cover and chill in the fridge for a few hours or overnight. 
    4. To serve, top with whipped cream if desired.

    TIPS FOR MAKING THE BEST VIRAL CHEESECAKE 

    • Use thick Greek yogurt – full-fat or strained works best for a creamy, cheesecake-like texture.
    • Layer the cookies thoughtfully – crush some for the base and tuck in pieces for extra cookie flavor without overcrowding.
    • Leave space between cookie pieces – about 1 inch so they soften evenly and don’t sink.
    • Add fresh fruit at the end – strawberries, raspberries, or your favorite fruit give it a bright, fresh finish.
    • Chill long enough – a few hours or overnight makes the cheesecake set perfectly and enhances the flavors.
    • Optional whipped cream – a small dollop adds a little extra indulgence for serving.
