Ingredients
- 1 LB chicken wings
- ยฝ tsp salt
- ยผ tsp pepper
- 3 tbsp buffalo sauce, divided
- 1 tbsp cilantro
- ยผ medium red onion, sliced, optional
How to make sous vide wings
The gist: Season and vacuum seal chicken wings, sous vide for 1 hour, then finish them in the broiler or air fryer for crispy skin.
Preheat sous vide
Set your sous vide machine to 145.5ยฐF.
Season wings
In a bowl, season chicken wings with salt, pepper, 1 tablespoon of buffalo hot sauce, and cilantro.
Vacuum seal
Arrange the seasoned chicken wings in a single layer in a vacuum seal bag with red onion slices and seal them.
Sous vide
Sous vide the chicken wings at 145.5ยฐF for 1 hour.
Dry
After 1 hour, remove the wings from the sous vide bath, pat them dry with a paper towel, and place them on a parchment-lined baking sheet.
Broil
Drizzle the wings with Frank’s buffalo hot sauce and broil on high for a few minutes.

Finish
Serve the wings with an extra drizzle of Frank’s hot sauce and blue cheese dressing.
Air fryer finish
- Set the fryer to 400ยฐF. Toss sous vide wings in olive oil and air fry sous vide wings for 5 minutes.
- Remove from the air fryer, shake wings in the fryer basket, and air fry for another 3-5 minutes until you have perfectly crispy sous vide wings.
Fry finish
Add 2-3 inches of canola oil to a medium sized pot. Bring the oil temperature to 375 degrees and use a spider strainer to quickly drop, fry, and remove the chicken wings when golden brown.
