    For the Cinnamon Filling

    • ⅔ cup light brown sugar
    • ¼ cup all-purpose flour
    • 2 tsp cinnamon, ground
    • ¼ tsp nutmeg, ground

    For the Streusel Topping

    • 1 cup all-purpose flour
    • ½ cup light brown sugar
    • 2 tsp cinnamon, ground
    • ¼ tsp salt
    • 8 tbsp salted butter, diced and frozen

    For the Sour Cream Coffee Cake Batter

    • 2 ¼ cups all-purpose flour
    • 2 ½ tsp baking powder
    • 1 tsp salt
    • 12 tbsp unsalted butter, softened
    • 1 cup sugar
    • ⅓ cup light brown sugar
    • 3 large eggs, room temp
    • ¾ cup sour cream, room temp
    • 2 tsp vanilla extract

    HOW TO MAKE SOUR CREAM COFFEE CAKE WITH CINNAMON STREUSEL

    Here’s the step-by-step recipe…

    Step 1 – Prep the Pan. Preheat the oven to 350°F. Line a 9-inch square pan with parchment paper, then lightly grease the parchment and sides.

    Step 2 – Make the Cinnamon Filling by whisking together all the ingredients: brown sugar, flour, cinnamon, and nutmeg. Set aside.
    Step 3 – Make the Streusel Topping in another bowl. Whisk together flour, brown sugar, cinnamon, and salt. Add frozen diced butter and use your fingers to smoosh and crumble it together until all the dry ingredients are held in the butter. Pop in the fridge while assembling the cake.
    Step 4 – Make the Cake Batter. In a medium bowl, whisk together flour, baking powder, and salt. Using a hand or stand mixer, beat butter and sugar on medium speed until light and fluffy, about 2 minutes. Add eggs and yolk one at a time, mixing well after each addition. Scrape the bowl, and mix in sour cream and vanilla on low speed until combined. Slowly add dry ingredients and mix on low until just combined.
    Step 5 – Spread half the cake batter evenly into the prepared pan.
    Step 6 – Sprinkle all the cinnamon filling over the top.
    Step 7 – Add a layer of the remaining cake batter on top then top with chilled cinnamon streusel, starting at the edges.

    Step 8 – Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for at least 20 minutes before slicing and serving.

    • Use room temperature ingredients: This helps the batter mix evenly and creates a softer crumb.
    • Don’t overmix the batter: Mix just until combined to keep the coffee cake tender.
