The gist: Smoke the T-bone steaks low and slow, then finish them off with a high-heat grill for that perfect sear and flavor.

1. Preparation
- Remove steaks from the refrigerator and let them sit at room temperature for about 20 minutes.
- Combine the salt, black pepper, garlic powder, and BBQ rub in a bowl to make a dry rub.

2. Seasoning steaks
Pat steaks dry with a paper towel and season them all over with the BBQ spice blend, rubbing it in thoroughly.

3. Smoking
- Add wifi internal read thermometer in steaks if desired. Preheat your Traeger or smoker grill to 250°F. (Alternatively, set it to 225°F for a slightly smokier flavor, but this will add an additional 15-20 minutes of smoking time.)
- Smoke the steaks at 250°F for about 25 minutes, or until they reach an internal temperature of 120°F.
