- 1 rack spare ribs
- 1 tablespoon yellow mustard
- 1.5 tablespoons BBQ rub
- 1.5 tablespoons BBQ sauce or glaze

How to smoke spare ribs with mustard binder
The gist: This recipe uses a mustard binder to create tender, flavorful BBQ smoked spare ribs with a perfect smoky crust.
1. Preheat Smoker
Preheat Traeger smoker to 275°F.
2. Prep Spare Ribs
Pat dry 1 rack of spare ribs with a paper towel. Trim excess fat as desired and remove the silver skin. (Silver skin is the tough, whitish connective tissue on the back of ribs that must be removed before cooking for a tender, enjoyable eating experience.)
3. Apply Mustard Binder
Rub 1 tbsp yellow mustard evenly over the ribs.
4. Season Ribs
Sprinkle 1.5 tbsp BBQ rub over ribs and massage it in.
5. Smoke Ribs
Place ribs in the smoker and cook at 275°F until the internal temperature reaches 185°F.
Brush top of ribs with 1.5 tbsp BBQ sauce and continue smoking until the internal temperature reaches 202-205°F.
6. Rest Ribs
If time allows, wrap ribs in foil and place in a cooler for 1-2 hours to rest.
