    1. Mix diced red potatoes with the side dish ingredients.
    2. Smoke, stirring regularly, at 225 degrees For a few hours until done.
    3. Finish smoked red potatoes with fresh herbs.

    Detailed recipe steps

    1. Preheat Traeger Grills or Pitt Boss or whatever pellet grill you’re using to 225 degrees F. 
    2. Assemble smoked red potatoes side dish in a cast iron skillet. In a large mixing bowl or directly in a large cast iron skillet, add red potatoes, red pepper, shallot, and garlic. Drizzle with olive oil. Sprinkle with salt and pepper. Mix together to season potatoes and vegetables all over. Add everything to a large cast iron skillet, if not already, and toss diced butter on top.
    3. Smoke red potatoes for 2-3 hours until potatoes are fork-tender to your liking, stirring every 30-60 minutes. Just put the cast iron in the smoker and close the lid.
    4. Remove from the smoker and finish red potatoes with a sprinkle of chives. Serve when cool enough to enjoy with something like smoked trout.

    Potato smoker recipes can vary, however for this smoked red potatoes recipe, it will take you 2 – 3 hours to finish when smoking at 225 degrees F. 

    How to smoke red potatoes?

    Smoking red potatoes is super simple! Start by preheating your smoker to 225 degrees F. You first wash and dice the red potatoes into 2’’ chunks. You will also dice the red pepper, garlic, and shallot. Next, coat all dry ingredients with olive oil and toss to combine in a bowl then add to a large cast iron pan or skillet. Place the cast iron pan in the smoker and smoke for 2 – 3 hours at 225 degrees F until done. 

    When are smoked red potatoes done?

    Smoked potatoes are done when they are “fork tender” meaning that you can easily pierce them with a fork or knife. 

    What else can you do with smoked red potatoes?

    You can use smoked red potatoes in a variety of ways. You can eat them directly out of the cast iron skillet which you smoked them in, make red potatoes and smoked sausage (like smoked kielbasa or smoked brats) which are all tremendously tasty combinations. Serve it over scrambled eggs for breakfast, or even use them for a smoked red potato salad. Delicious!

    If you’re going for a meat, vegetables and potatoes vibe, whip this up with some sautéed green beans dusted with grated parmesan cheese and smoked ribeye steak or smoked flank steak.

    Meat thermometer recommendations

    Every home chef needs a reliable meat thermometer to cook food perfectly. 

    On Sip Bite Go, you’ll often see me using:

    1. Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
    2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill. 

    It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature. 

    How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

    While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
