    Ingredients

    • 1 large loaf of challah bread
    • 12 eggs
    • 1 cup cream
    • ¼ teaspoon salt
    • ⅛ teaspoon cinnamon
    • ½ teaspoon vanilla extract
    • ½ lemon, zest
    • 20 cherries, pitted and halved (or strawberries, raspberries, blueberries)
    • 1 tablespoon brown sugar
    • Butter (for greasing the baking dish)

    How to Smoke French Toast Casserole

    Mix together the egg, cream and seasonings… add fresh challah bread and fruit, then smoke it on the pellet grill. 

    1. Prepare Bread

    Start with one large loaf of challah bread. Dice it into 1 to 2-inch cubes.

    2. Make the Egg Mixture

    Crack 12 eggs into a bowl and add one cup of cream. Add ¼ teaspoon of salt, ⅛ teaspoon of cinnamon, and ½ teaspoon of vanilla extract. Whisk everything together to combine.

    3. Combine Challah and Egg Mixture

    Pour the wet mixture over the diced challah bread. Use your fingers to thoroughly coat the bread with the egg mixture.

    4. Add Lemon Zest and Cherries

    Zest half a lemon and add it to the mixture. Add 20 halved, pitted fresh cherries. Combine the mixture together with your hands.

    5. Prepare the Baking Dish

    Butter the bottom of a large baking dish (about 9×13 inches) and add the French toast mixture, spreading it evenly. Sprinkle the top with one tablespoon of brown sugar.

    6. Chill (Optional)

    Chill the mixture for an hour up to overnight. Note that chilling will increase the time it takes to smoke french toast casserole. 

    7. Smoke French Toast Casserole

    Smoke at 350°F for 30-45 minutes, or until egg mixture is set.
