For the smoked cake batter
- butter
- milk, whole or 2% preferred
- eggs
- sugar
- flour
- baking powder
- lemon juice
- vanilla extract
- pineapple

- butter
- brown sugar
- cinnamon

How to Smoke Cake
Now I’ll walk you through it…

- Preheat the smoker to 350 degrees F and prepare the cake batter in a baking pan.
- Smoke for 45 – 60 minutes until done.
- Top the smoked cake with the melted butter brown sugar topping.
- Let cool for 15 minutes then enjoy.
Detailed recipe steps
- Prep a 9×13 rimmed sheet cake pan (3-4 inches high on the side). I like to put down parchment paper and then spray it with cooking spray or grease the baking pan with butter.
- Melt milk and butter together. Add the stick of butter and milk to a saucepan or skillet with a rim set to medium-high heat. Once butter is melted, turn off the burner. You don’t want the milk to start bubbling. Set aside.
- Mix the smoked cake batter together in a large bowl. First, beat the eggs with the mixer together at high speed. Then add sugar and beat together, until smooth and combined (on high speed). Add flour and beat together again (on high speed). Next, sprinkle baking powder on top of the cake batter. Then pour the melted milk and butter mixture over the top of the baking powder. The mixture will start bubbling on its own (I forgot to tell you this is a magical experience… when it “activates” it becomes alive!!). Once the mixture is done bubbling, a couple minutes later, blend it together with the mixer on low speed until combined. Finally, add lemon juice and vanilla extract and mix together on low until combined.
- Pour smoked cake batter into the cake pan. Top with diced pineapple.
- Smoke cake at 350 degrees F for 45-60 minutes. Cake is done smoking when a toothpick inserted comes out clean. The edges of the cake will be browning and peeling away from the edge of the cake pan. Remove from the smoker and set aside.
- Make the brown sugar topping by adding the butter, brown sugar and cinnamon to a pan on the stove on medium heat. Melt together, stirring regularly with a whisk, until the mixture thickens and coats the back of a spoon. Pour on smoked cake.
- Let cool and enjoy.

Every home chef needs a reliable meat thermometer to cook food perfectly.
On Sip Bite Go, you’ll often see me using:

It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.
How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

Yes, you can definitely bake a cake in a smoker. In my recipe, I baked a cinnamon cake with freshly diced pineapple. (smoked pineapple is the best!) Baking a cake in a smoker like this was super simple and turned out delicious.
I recommend that you use a fruitful smoke flavor like apple, maple, or cherry. If you’re making it around Thanksgiving, though, try these turkey blend Traeger pellets.
You’ll know when the cake is done by doing the toothpick test. What’s the toothpick test? That’s when you stick a toothpick directly in the center of the cake. If it comes out clean with no cake batter stuck to it, then it’s done. If it’s not clean, then leave it in the smoker for a few extra minutes. If you do not have a toothpick handy, just use a butter knife.
