    Why smoke an apple pie …

    • It’s easy! The Sip Bite Go recipe has a few steps to help elevate a normal apple pie into something smoky and unique, especially if you’re smoking with apple wood pellets or wood chips. 
    • Use frozen pie or pie crust if you’d like! This recipe can be done with either an already assembled frozen pie, too, so it’s very versatile. The real objective here is to get an amazing smoke flavor infused into the pie during the cook. 
    • Great dessert to smoke for a crowd… Smoked pie is a fantastic dessert to bring to an event or holiday gathering. I assure you that you will not need any plastic wrap for leftovers because your guests will be eating this pie up!
    • While I did not publish a recipe for this yet, you could follow these steps for an apple crumble. Just cook down the apples and add a crumble topping before smoking. Did someone say apple crumble as my next smoker recipe….

    Ingredients

    Here’s what you need to make smoked apple pie.

    For making smoked apple pie filling with caramel sauce

    • pie crust (double top/bottom, store-bought, thawed)
    • Granny Smith apples, skins removed, cored and cut into 1” thick slices
    • light brown sugar
    • cinnamon 
    • lemon zest and juice 
    • vanilla extract
    • nutmeg (substitute pie spice or allspice)
    • butter, unsalted

    • egg yolk
    • turbinado sugar (optional, for a lightly sweet crust)

    You can make homemade pie crust, or just use frozen store bought pie dough. This one is tasty.

    Quick look at Smoked Apple Pie recipe

    1. Preheat the smoker to 350 degrees F. 
    2. Cook apples and add the apple mixture to the pie crust.
    3. Smoke apple pie at 350 degrees F for 60-90 min until done.
    4. Remove from the smoker and let it cool.
    5. Slice, serve on a pie plate and enjoy!

    Detailed recipe steps

    1. Preheat Traeger Grills or Pitt Boss or whatever pellet grill you’re using to 350 degrees F. Set out pie crust to bring it to room temperature (or whatever your pie crust label tells you to do!).
    2. Add main smoked apple pie ingredients to a large bowl combine: Granny Smith apples, light brown sugar, cinnamon, lemon juice, lemon zest, ​​vanilla extract, and allspice or nutmeg. Stir to coat apples with spices. Set aside.
    3. Melt butter in a large pot or skillet (that will be able to hold all the apples) on the stove on medium-high heat. Once it melts, add apples.
    4. Cook apples on the stove, stirring regularly until apples begin to brown and become soft. This will take about 10 minutes. Set aside.
    5. (optional) Prepare a pie dish for smoking apple pie. If you purchased store bought pie crust, this might not be needed because it often comes in tin containers which can be smoked. Otherwise, add pie crust to a pie pan or cast iron as a third option.
    6. Pour cooked apples into the bottom pie crust mold, without getting the extra liquid in the pie. This next part is optional, but what I like to do is put the liquid from the apples back on the stove and reduce it down, over high heat, until it’s thick enough to pour on the apples. Don’t put very thin liquid in the pie crust or it will make the pie crust mushy. When you cook this down, it will take 5-10 minutes and you know it’s done when the consistency is like a liquid caramel. YUM!!
    7. Top smoker apple pie with the other pie crust. Use your fingers to push the edges of the pie crust together to seal the pie. Brush the crust all over with a light coating of egg yolk. Poke holes in the top of the pie crust to help steam escape as it cooks. Sprinkle the top with sugar and head out to the Traeger.
    8. Smoke apple pie in the pellet grill for 60-90 minutes at 350 degrees F. 
    9. Remove smoked apple pie from the Traeger when it has a golden brown crust. 
    10. Let rest 20-30 minutes before slicing and serving.

    FAQs 

    Should I pre cook apples for pie smoked on the pellet grill?

    Yes, I recommend that you pre-cook your apples prior to adding them to your pie crust and smoking. If you pre-cook your apples a bit, it will ensure that they fully cook during the smoking process. You want to avoid having your crust done before your apples. Pre-cooking apples is also good because it lets the flavors blend together prior to the smoke. 

    Can you smoke apple pie with a pre-made pie crust?

    Yes you can! That’s exactly what I did in this smoked apple pie recipe.

    Can I smoke a frozen apple pie?

    Yes, you can smoke an apple pie from frozen. Just follow the instructions and treat your smoker like an oven. Some frozen pies may require that you thaw them first before cooking, so please be sure to do that if the directions say to do so. 

    What wood pellets / wood chips are best for smoking apple pie?

    Any fruit forward wood pellets or chips will work best for smoked apple pie. Try things like Traeger Apple Pellets, cherry, pecan, or any other fruit blend is fine too. 

    How do you make pie crust?

    In case you want to be extra adventurous and make your own pie crust, you’ll need the following: AP flour, salt, sugar, cold butter, and a touch of water to combine. Add these ingredients to a food processor or combine with a medal whisk until you have a rough ball of dough.

    Knead the dough until smooth using the palm of your hand. Wrap the pie crust dough in plastic wrap and let it rest in the fridge prior to rolling it out for your pie.

    Meat thermometer recommendations

    Every home chef needs a reliable meat thermometer to cook food perfectly. 

    On Sip Bite Go, you’ll often see me using:

    1. Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
    2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill. 

    It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature. 

    How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

    While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

    Ingredients

    • 1 9 inch pie crust store-bought, thawed, sold together as 2 crusts for top/bottom
    • 7 medium Granny Smith apples skins removed, cored and cut into 1” thick slices
    • 1 cup light brown sugar
    • ½ tsp cinnamon ground
    • 1 medium lemon zest
    • 1 medium lemon juiced
    • ½ tsp vanilla extract
    • ¼ tsp nutmeg substitute pie spice or allspice
    • ¼ cup butter unsalted
    • 1 medium egg yolk whisked
    • ¼ tsp turbinado sugar optional, for a lightly sweet crust

    Instructions
