BBQ Shredded Beef
- 2 ½ lbs beef chuck roast
- 2 tsp yellow mustard
- 1 tbsp BBQ rub
- 1 tsp olive oil
- 3 tbsp BBQ sauce plus extra for serving
- 1 cup beef broth
- ½ tsp salt
- ¼ tsp garlic powder
- ¼ tsp black pepper
- 2 tbsp Worcestershire sauce
To Make Sandwiches
- Sandwich buns Hawaiian rolls or hamburger buns
- Pickles
- Onions
- Pickled onions
- Coleslaw
Instructions
- Prep the beef: Pat the beef dry with a paper towel. Coat the beef chuck all over with yellow mustard, then rub it with your favorite BBQ rub.
- Sear the meat: Heat olive oil in a large pan over medium to medium-high heat. Brown the beef on all sides, including the edges, without cooking it through.
- Add to Crock Pot: In a separate bowl or directly in the crock pot, mix together beef broth, salt, garlic powder, black pepper, and Worcestershire sauce. Place the seared beef in the Crock Pot. Add 2–3 tablespoons of BBQ sauce on top of the beef.
- Cook low and slow: Cover and cook on high for about 8 hours (or until the beef is fork-tender and shreds easily).
- Shred and toss in juices: Remove the beef and shred it with two forks. Return the shredded beef to the Crock Pot and toss it in the cooking liquid. Add ¼ cup extra BBQ sauce if desired for extra flavor and juiciness.
- Serve: Pile the shredded beef onto buns and top with pickles, pickled onions, or coleslaw if you like.
