    Here’s what you need to make this sheet pan chicken dish.

    • Chicken breasts, cooked, diced (about 1-2 pieces of chicken)
    • Olive oil
    • Tortillas, the small ones, or use crunchy taco shells
    • Mexican shredded cheese
    • Red pepper
    • Onion
    • Cilantro
    • BBQ sauce 
    • Lime
    • Avocado

    How to make baked BBQ chicken tacos

    Now I’ll walk you through how to oven bake chicken tacos.

    1. Preheat the oven to 400 degrees F. Brush a large parchment paper lined, rimmed baking sheet with olive oil. 
    2. Add corn tortillas to the baking sheet. 
    3. Add equal amounts of taco fillings to one half side of each tortilla: diced chicken breast, cheese, diced red pepper, diced onion, and a little cilantro. Drizzle each taco with bbq sauce. Fold over all the tacos in half – secure with 2 toothpicks if needed.
    4. Bake in the oven for 8-12 minutes or until the cheese has melted and taco shells are lightly browned and crispy. 
    5. Serve with extra bbq sauce, mashed avocado and (optional) the jalapeño ranch dressing from Sip Bite Go, or sour cream.

    On the first night, make a chicken dish like oven roasted chicken, air fryer whole chicken, or smoked whole chicken. Save one cup of diced cooked chicken for these tacos the second night. 

    Can you make tacos from rotisserie chicken?

    Yes, leftover store bought rotisserie chicken can be shredded with two forks and used in this recipe. It will make tender, tasty pulled chicken tacos.

    Why I wrote this recipe

    We keep making these easy chicken tacos for game nights so it’s time to share the recipe. I love assembling them earlier in the day, then popping them in the oven for dinner.

    They’re ready in about 15 minutes. I always like it when my husband asks for my recipes on his nights to cook.

    He’s asked for this one so it’s time to post it so I can tell him to go to SBG next time. Ha! That really happens.

    He’s made these chicken tacos a couple of times now, too.

    Ingredients

    I don’t find it necessary to add salt and pepper since there’s plenty of flavor in the cooked chicken and the sauce.
