- Chicken breasts, cooked, diced (about 1-2 pieces of chicken)
- Olive oil
- Tortillas, the small ones, or use crunchy taco shells
- Mexican shredded cheese
- Red pepper
- Onion
- Cilantro
- BBQ sauce
- Lime
- Avocado
How to make baked BBQ chicken tacos
Now Iโll walk you through how to oven bake chicken tacos.
- Preheat the oven to 400 degrees F. Brush a large parchment paper lined, rimmed baking sheet with olive oil.
- Add corn tortillas to the baking sheet.
- Add equal amounts of taco fillings to one half side of each tortilla: diced chicken breast, cheese, diced red pepper, diced onion, and a little cilantro. Drizzle each taco with bbq sauce. Fold over all the tacos in half – secure with 2 toothpicks if needed.
- Bake in the oven for 8-12 minutes or until the cheese has melted and taco shells are lightly browned and crispy.
- Serve with extra bbq sauce, mashed avocado and (optional) the jalapeรฑo ranch dressing from Sip Bite Go, or sour cream.
