Here’s what you need to make this carrots, onion, and peppers side dish…
- Yellow onion
- Carrot
- Red onion
- Green bell pepper
- Jalapeño
- Olive oil
- Water
- Green onions
- Salt and pepper
How to make this sauteed carrots side dish
Now I’ll walk you through how to saute carrots and onions and all the veggies for this side dish…
- Set a medium sized pan to medium high heat on the stove.
- Add half the olive oil and sauté vegetables, stirring regularly every couple of minutes for 10 minutes. If / when they start browning and if you smell them almost starting to burn, add water, the rest of the olive oil, and reduce heat to medium. Cook, uncovered, stirring regularly, until liquid has cooked out (which will take 5-10 minutes).
- Transfer to a bowl and garnish with diced green onion and serve.

Yes – it’s a great refrigerator clean out dish at the end of the week when you’re looking for what to make with one carrot, onion, pepper, etc. Add in a potato, parsnip, or corn, too. Also see my recipes for caramelized shallots and caramelized onions.
I add 1 tbsp water, cover and cook the vegetables on extremely low heat, or turn off the heat while I’m finishing cooking tri tip in oven or whatever else is for dinner.

Meat thermometer recommendations
Every home chef needs a reliable meat thermometer to cook food perfectly.
On Sip Bite Go, you’ll often see me using:
- Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
- ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill.
It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.
How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

Sautéed Carrots And Onions And Peppers Side Dish
Ingredients
- 1 medium yellow onion diced ½”
- 1 medium carrot peeled and diced ½”
- 1 medium red onion diced ½”
- 1 medium green bell pepper diced ½”
- 1 medium jalapeño diced ½”
- 2 tbsp olive oil divided in half
- ½ cup water
- 2 medium green onions diced
- salt and pepper as desired
Instructions

I googled what can I do with carrots and onions, this recipe came up and I sure am glad. What a nice clean out the fridge recipe this is. I didn’t have a fresh jalapeño so I subbed in a pickled one, gave it a little heat. Again thanks for the recipe.
