    What are roasted fava beans like?

    Eating fava beans is similar to eating edamame. There’s an outside pod they are cooked in, but you don’t eat the pod, it’s there for flavor and to steam the delicious fava beans inside them.

    So how do they taste? The outside shell gets crispy and charred when cooked in a very hot oven. Inside you find the fava beans – the part you eat – which when roasted turn out soft and buttery. The seasonings used in this baked fava beans recipe compliment the flavors and make this a simple, but addictive, vegetarian side dish.

    Ingredients

    Here’s what you need to make this tasty oven baked fava beans recipe…

    • Fava beans still in the pod (aka “whole fava beans” that are fresh, not dried)
    • Olive oil
    • Salt
    • Garlic powder
    • Optional for serving: sesame seeds and lemon wedges and any additional amount of salt you’d like.

    How to roast fava beans

    Just a few minutes of prep and farmers market fresh fava bean pods are ready to bake. Here’s how to make this roasted fresh fava beans recipe.

    1. Preheat the oven to 450 degrees F. Set out a large rimmed sheet tray with parchment paper.
    2. In a large bowl, whisk together olive oil, salt, and garlic powder.
    3. Add thoroughly dried fava bean pods to the large bowl and use a spatula to toss and coat them in olive oil seasonings. Transfer fava bean pods to the baking sheet and cook at 450 degrees F for 20 minutes. Flip, rotate pan in the oven (for even baking), and cook fava bean pods for 10-15 more minutes, until you can very easily pierce through the inside beans with a fork. The outside of the fava bean pods will be charred and brown. This is perfect.

    To serve, transfer baked fava beans to a serving platter and top with a sprinkle of sesame seeds and lemon wedges to squeeze on top. Add any additional salt you’d like as well.

    To eat them, squeeze out the beans from the pod and discard the pod.

    • 1.5 lb fava beans whole in pod, washed and dried thoroughly
    • 2 tbsp olive oil
    • ½ tsp salt
    • ¼ tsp garlic powder
    • ½ tsp sesame seeds optional, for serving
    • ¼ lemon wedges (optional, for serving)

    Notes

    • Make sure to completely wash beans and dry them with paper towel before roasting them, so they get extra crisp.
    • You don’t need to cut the ends off fava beans before roasting them.
    • Make this a roasted fava beans bulk recipe by scaling up and using multiple sheet trays so the bean pods don’t overlap when baking.
