These BBQ Pork Puff Pastry Rolls are a quick and tasty appetizer that’s perfect for any party or game day (or for us: a weeknight dinner). With BBQ pork, sautéed onions, and bell peppers all wrapped in buttery, flaky puff pastry, these bite-sized snacks will disappear fast!

Ingredients
- ¼ cup onion, diced
- ¼ cup red bell pepper, diced
- ½ tablespoon olive oil
- 1 tablespoon butter
- 1 sheet puff pastry (thawed and rolled slightly larger)
- 1 cup cooked BBQ pork (warmed with extra BBQ sauce, if needed)
- 1 egg (whisked for egg wash)
- 2 tablespoons everything bagel seasoning
- ¼ cup BBQ sauce for serving
Note – You can use leftover BBQ smoked pulled pork or buy it pre-made from the store.
How to make Pulled Pork Pastry Puffs
- In a large skillet, heat olive oil and butter over medium-high heat. Add diced onions and red bell peppers. Cook, stirring regularly, until softened and slightly caramelized.
- Spread parchment paper on a work surface and roll out the puff pastry sheet slightly. Cut it into three equal sections.
- Spoon equal amounts of the onion and pepper mixture down the center of each section, then add a line of warmed BBQ pork over each.
- Fold the edges of each puff pastry section over the filling, securing the edges together. Flip each roll seam-side down.
- Brush the top of each roll with the whisked egg and sprinkle with everything bagel seasoning.
- Cut each roll into 2-inch pieces and place them on a baking sheet lined with parchment paper.
- Bake in the oven at the temperature indicated on the puff pastry box, until golden brown.
