    • Eat it any time of the day. This is an easy dinner but it also an easy appetizer and one of my go to brunch recipes when we have company.

    Ingredients

    Here’s what you need to make this easy puff pastry pizza recipe.

    • Puff pastry sheet
    • Tomato sliced into circles
    • Mozzarella balls and/or shredded mozzarella
    • Pizza sauce (see this homemade pizza sauce or white pizza sauce)
    • Basil, fresh

    How to make puff pastry pizza

    Let’s make it…

    1. Preheat the oven to 425°F. Take out a sheet pan and set it aside.
    2. Place a piece of parchment paper on a cutting board or work surface. Add the puff pastry dough sheet on top. Use a rolling pin to roll out puff pastry dough so it is 2-3 inches larger. (You can elongate the dough as you roll it out, to make a rectangle pizza shape instead of a square pizza, if desired to fit your sheet pan.)
    3. Assemble the puff pastry pizza by adding a layer of tomato sauce in the center, and leaving 1” around the outside without sauce (for the pizza crust). Add tomato slices on top of the sauce. Then, top it with shredded and fresh mozzarella cheese. (You can set it in the fridge to meal prep it in advance once it’s assembled, or bake it at this time.)
    4. Add the puff pastry pizza to the oven and bake it for 10 -15 minutes or until the cheese has melted at 425°F. Rotate the sheet tray in the oven halfway for best results. When it’s done, the  crust will be fluffy and golden brown.
    5. Remove puff pastry pizza from the oven and top it with fresh basil before serving.

    Can I use frozen puff pastry in this recipe?Can I use all my favorite toppings on puff pastry pizza?

    You definitely can! I love trying out new flavor combinations when I’m making pizza at home, and once you begin experimenting, you’ll discover the sky’s the limit. Some gourmet puff pastry pizza ideas can be made with my other pizza recipes, like this one for pulled pork pizza, Philly cheese steak pizza, and chicken spinach pizza.

    Do you need an egg wash to get a flaky crust?

    No, I don’t find it necessary to mix together an egg wash (egg yolk and a little water) to brunch on the one inch border around the puff pastry pizza dough. I also don’t find it necessary to add ​​olive oil as buttery puff pastry sheets can get soggy if you add extra oil to them.

    Can I use frozen puff pastry in this recipe?

    While frozen puff pastry will work just as well as fresh, you do want to thaw it out before you roll it out. Frozen pastry is prone to cracking— not what you’re looking for when you’re baking pizza. Let it thaw overnight in the fridge for best results.

    What can I serve with puff pastry pizza?

    Puff pastry pizza is rich and full in flavor, which makes it best served with light appetizers or salads like this peach salad or strawberry feta salad or Caprese cucumber salad.

    1. NEVER do this… Contrary to what most people believe, when baking pizza on a sheet pan, never add toppings to raw pizza dough. Instead, follow my recipe for making homemade pizza with ready made dough, which will teach you how to par bake pizza dough first.
    2. Get help from secret ingredients…
      – This dough seasoning is the secret to real Italian-tasting homemade pizza dough.
      – Add pizza seasoning to store bought pizza sauce. This makes the pizza taste really fresh!
    3. Herbs are for after… In my weekly pizza making practice, I’ve found that fresh herbs, like basil, need to be added to pizza after the pizza is done baking (so the herbs don’t wilt).

    Ingredients

    • 1 sheet puff pastry sheet thawed
    • 1 medium tomato sliced ½” circles
    • 6 small mozzarella balls fresh, cut in half
    • 1 cup mozzarella shredded
    • ¼ cup pizza sauce
    • 1 tbsp basil fresh chopped thin (optional)

    Instructions

    • Preheat the oven to 425°F. Take out a sheet pan and set it aside.

    The pizza will take a few extra minutes if you meal prepped it and are cooking it directly from the refrigerator. For best results, take it out at least 10 minutes in advance to let it come up to room temperature before baking it.
     
    This recipe doesn’t use much pizza sauce, because I like to ​​spread pizza sauce thin when working with puff pastry sheets, to prevent the dough from getting soggy.
