Here’s how to assemble and bake pita bread pizza.

- Preheat oven to 400 degrees F. Set out a large baking sheet lined with parchment paper or aluminum foil.
- Brush or drizzle olive oil on all sides of each pita (this step is what gives pita pizza a crispy crust).
- To each piece of pita bread, add pizza sauce and sprinkle with Italian seasonings. Top with mozzarella cheese, ham, and a sprinkle of parmesan cheese. Bake in the oven for 7-10 minutes or until the cheese starts to bubble.

- Toppings: pan seared chicken (or use leftover chicken breast), cheddar cheese or mozzarella cheese, red pepper, barbecue sauce, and a sprinkle of fresh cilantro.

Greek pita bread pizza with feta cheese
- Sauce: a simple white pizza sauce with a drizzle of olive oil sprinkled with garlic powder.
- Toppings: a little mozzarella cheese, diced kalamata olives, thinly sliced red onions and fresh tomatoes, and a sprinkle of feta cheese when it comes out of the oven.
Vegetarian pita pizza with broccolini
- Sauce: make it a white pizza with a simple base of olive oil and a sprinkle of garlic powder and a sprinkle of black pepper.
- Toppings: tomato sauce, broccolini, mozzarella cheese, a sprinkle of crushed red pepper flakes.
Steak and cheese pita pizza
- Sauce: marinara sauce or a white pizza sauce with a sprinkle of Italian seasonings.
- Toppings: thinly sliced cooked steak (like coulotte or skirt steak), mozzarella cheese, bell peppers and onions, and parmesan cheese are my family’s favorite toppings.

Buffalo chicken pita pizza
- Sauce: a little drizzle of buffalo sauce
- Toppings: diced sous vide chicken breast or any leftover chicken that’s cooked, mozzarella cheese, and after it bakes, add a drizzle of diced carrots, celery, and blue cheese dressing on top. For fresh herbs, cilantro is my favorite for this flavor combo.

In this demonstration, I’m using a Greek pita bread that’s actually whole wheat pitas, I think from Whole Foods. I find that all grocery store bought pita breads can result in a delicious, crispy pita bread pizza. Including gluten-free pita bread. The key is to add a little olive oil as mentioned in the instructions.
Honestly, there’s not much health difference between the two— both pita breads and pizza dough utilize a simple yeast dough, which contains many of the same ingredients. If you use whole wheat pizza, of course, you can rack in some easy health points. The main benefit of pita bread, though, is the ease with which it can be topped with all your favorite toppings and made into delicious pizzas very quickly, without parbaking pizza dough first.
Pita bread pizza cooks beautifully on the grill– just make sure you keep the flame low enough that the cheese is melted before the pita is burned.
If you don’t have pita bread or want to try something else, you can make these pizzas on frozen pizza dough, flatbread naan bread (like used in this ravioli pizza), or parbaked pizza crusts.
