    What’s in this NY strip steak dinner idea

    Steak & Rub

    • 2 New York strip steak
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • ½ teaspoon garlic powder

    • 1 yellow onion, diced
    • 1 red pepper, diced
    • 2 tablespoons butter
    • ¾ teaspoon salt
    • ½ teaspoon pepper
    • ¼ teaspoon smoked paprika
    • ¼ teaspoon oregano
    • 1 cup frozen corn

    Jalapeño Ranch Sauce

    • 1 cup sour cream
    • 3 cloves garlic, minced
    • Juice of 1 lime
    • ½ cup fresh cilantro
    • 1 jalapeño, stem, pith, and seeds removed, diced
    • Salt and pepper to taste

    How to make a complete NY strip dinner

    NY Strip Steak Dinner with Vegetables and Sauce

    1. Bring steak to room temperature

    Set out NY strip steak at room temperature while preparing the veggies and sauce. 

    2. Sauté the Vegetables

    • In a large skillet over medium-high heat, melt 2 tablespoons of butter. 
    • Add 1 diced yellow onion and 1 diced red pepper. 
    • Sprinkle with ¾ teaspoon salt, ½ teaspoon pepper, ¼ teaspoon smoked paprika, and ¼ teaspoon oregano. 
    • Stir and cook for 3-4 minutes, or until the veggies begin to soften and turn translucent.

    3. Add Corn

    • Stir in 1 cup of frozen corn. 
    • Continue cooking for 5-10 minutes, stirring occasionally, until the vegetables are fully cooked and to your liking. Set aside.

    4. Prepare the Steak Rub

    • In a small bowl, combine 1 teaspoon salt, ½ teaspoon pepper, and ½ teaspoon garlic powder. 
    • Generously season the steak with about half of this mixture. Let the steak rest while you make the sauce.

    5. Make the Jalapeño Ranch Sauce

    • In a blender, add 1 cup sour cream, 3 minced garlic cloves, the juice of 1 lime, ½ cup fresh cilantro, and the diced jalapeño (with the stem, pith, and seeds removed).
    • Add the remaining seasoning from the steak rub (or add some salt and pepper to your liking). 
    • Blend until smooth and combined. 
    • Store in the fridge while cooking the steak.

    6. Cook the Steak

    • Heat a large cast iron skillet over medium-high heat. 
    • Add 2 tablespoons of butter. 
    • Once sizzling and hot, sear the steak for 3-4 minutes on one side until it starts to brown. 
    • Flip and sear the other side for another 3-4 minutes. 
    • Sear the edges as well by turning the steak on its sides with tongs. 
    • Keep flipping the steak every couple of minutes until it reaches your preferred doneness. 
    • For rare, the internal temperature should be about 120°F. 
    • If you prefer it more cooked, transfer the steak to a 400°F oven or air fryer for a few more minutes. This will help evenly cook the inside without burning the outside.
