    WHY YOU’LL LOVE MY MINI PANCAKE SKEWERS

    You’re going to love these Mini Pancake Skewers because they’re fun to make, super cute to serve, and are always a hit at brunch.

    The idea came from one of our backyard breakfast cookouts—pancakes, bacon, fruit… and suddenly, skewers just made sense for serving a crowd!

    These are easy to serve according to the season… use colorful sprinkles to turn this dish into a festive red white and blue food platter for a long holiday weekend like July 4th.

    INGREDIENTS FOR MINI PANCAKE SKEWERS

    • Bacon
    • Butter
    • Pancake batter
    • 1 pint strawberries
    • 2 bananas

    Optional toppings

    • Whipped cream
    • Sprinkles
    • Chocolate sauce
    • Maple syrup

    HOW TO MAKE MINI PANCAKE SKEWERS ON THE GRIDDLE

    Griddle Cooking Bacon Slices
    Step 1: Heat a griddle to medium and melt 1 tablespoon of butter. Add the sliced bacon and cook until crispy, about 5–10 minutes, flipping halfway. Remove when crisp to your liking and drain on paper towels. 
    Step 2: Wipe the griddle if desired, then add 1–2 tablespoons of butter and spoon small circles (about ½ tablespoon each) of pancake batter onto the hot surface. Cook until bubbles form and edges are golden, then flip and cook through.

    Step 3: Once everything is ready, assemble mini skewers by layering bacon, strawberry slices, and banana slices and pancakes. Serve with your favorite toppings.

    TIPS FOR MAKING THE BEST MINI PANCAKE SKEWERS

    • Let your pancake batter sit at room temp while the bacon cooks. It helps with fluffier results.
    • Don’t use soggy fruit. Slice strawberries and bananas right before serving.
    • Let pancakes cool slightly before skewering. This will help avoid breaking soft pancakes or burning fingers.
