    WHY YOU’LL LOVE MY MARINATED PEPPERS AND ONIONS

    They’re super simple to prep, packed with flavor, and make any grilled meal 10x better. Plus, they’re healthy-ish and totally make-ahead friendly.

    I started making these for backyard cookouts and now they show up on everything—from veggie kebabs to weeknight tacos. They add that juicy, charred, just-grilled goodness to whatever’s on the plate.

    INGREDIENTS

    • 1 red bell pepper
    • 1 orange bell pepper
    • 1 yellow bell pepper
    • 1 red onion
    • 1 yellow onion
    • 1 tablespoon olive oil
    • ½ teaspoon salt
    • ¼ teaspoon black pepper, coarse (freshly ground, if possible)
    • ¼ teaspoon garlic powder

    HOW TO MAKE MARINATED PEPPERS AND ONIONS FOR GRILLING OR ROASTING

    1. Prep the veggies: Cut all peppers and onions into large, uniform chunks—about 3 inches each.
    2. Make the marinade: In a large bowl, toss the veggies with olive oil, salt, black pepper, and garlic powder until evenly coated.
    3. Marinate: Cover and refrigerate 30 minutes to overnight to let the flavors soak in.
    4. Use as desired: Perfect for popping onto skewers, grilling in a veggie basket, or roasting on a sheet pan in the oven.
