INGREDIENTS
- 1 red bell pepper
- 1 orange bell pepper
- 1 yellow bell pepper
- 1 red onion
- 1 yellow onion
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper, coarse (freshly ground, if possible)
- ¼ teaspoon garlic powder

- Prep the veggies: Cut all peppers and onions into large, uniform chunks—about 3 inches each.

- Marinate: Cover and refrigerate 30 minutes to overnight to let the flavors soak in.
