Ingredients
- 1 LB 10 oz waffle fries, cooked crisp
- ¾ cup cheddar cheese
- 1.5 cup pulled pork, cooked and diced
- 3 tbsp bbq sauce
- ¼ cup red pepper, diced
- ¼ cup red onion, diced
- ¼ cup yellow corn kernels, cooked from frozen
- ¼ cup shredded Cotija cheese
- 1 tbsp chives, chopped, for serving
- 1 avocado, mashed, for serving

How to make pulled pork waffle fry nachos
The gist: Layer pulled pork, cheese and veggies on top of crispy waffle fries and cook until done.
- Preheat Oven to 425°F. Prepare a baking sheet with parchment paper.
- Spread waffle fries and top with cheddar cheese.
- Add pulled pork, drizzle BBQ sauce.
- Add red pepper, red onion, corn, and Cotija cheese.
- Bake for 10-15 minutes until the cheese is melted.
- Garnish with chives and mashed avocado.
