    Ingredients

    • 1 LB 10 oz waffle fries, cooked crisp
    • ¾ cup cheddar cheese
    • 1.5 cup pulled pork, cooked and diced
    • 3 tbsp bbq sauce 
    • ¼ cup red pepper, diced 
    • ¼ cup red onion, diced
    • ¼ cup yellow corn kernels, cooked from frozen
    • ¼ cup shredded Cotija cheese
    • 1 tbsp chives, chopped, for serving
    • 1 avocado, mashed, for serving

    How to make pulled pork waffle fry nachos

    The gist: Layer pulled pork, cheese and veggies on top of crispy waffle fries and cook until done.

    1. Preheat Oven to 425°F. Prepare a baking sheet with parchment paper.
    2. Spread waffle fries and top with cheddar cheese.
    3. Add pulled pork, drizzle BBQ sauce.
    4. Add red pepper, red onion, corn, and Cotija cheese.
    5. Bake for 10-15 minutes until the cheese is melted.
    6. Garnish with chives and mashed avocado.
