    If you love easy to make Italian sandwiches, try this viral Italian chopped sandwich – it is made in a hollowed-out bagel.

    INGREDIENTS

    • 1 loaf bread
    • 1 tsp olive oil
    • 2 tsp red wine vinegar
    • ⅛ tsp salt
    • ⅛ tsp garlic powder
    • ⅛ tsp pepper
    • 1 tomato, sliced thin
    • ¾ cup iceberg lettuce, sliced thin, divided
    • ¼ lb provolone cheese
    • ¼ lb pepperoni
    • ¼ lb genoa salami
    • ¼ lb mortadella
    • ¼ lb sweet capocollo
    • 2 tbsp pickled red onions, or thinly sliced red onion or pickles
    • 1 tbsp mayo or creamy italian dressing

    POPULAR SUBSTITUTIONS & ADDITIONS

    • Swap the meats. Try hot soppressata, turkey, ham, or prosciutto depending on what you love or have on hand.
    • Change the cheese. Mozzarella, provolone piccante, or even a little shaved parmesan work beautifully.
    • Add more crunch or tang. Banana peppers, roasted red peppers, olives, or giardiniera are all delicious upgrades.

    HOW TO MAKE AN ITALIAN STUFFED PICNIC LOAF

    Here’s the step-by-step recipe…

    Step 1 – Slice the loaf of bread in half horizontally. Hollow out the soft interior to create space for the fillings, leaving about ½” of crust.
    Step 2 – Drizzle the inside of the top half of bread with olive oil and red wine vinegar. Season with salt, garlic powder, and black pepper.
    Step 3 – Start layering the fillings on the bottom half of the loaf. Add tomato slices and half of the shredded lettuce.
    Step 4 – Layer on the provolone, pepperoni, Genoa salami, mortadella, and sweet capocollo. You may want to add 2-3 layers of each, depending on how thick the loaf of bread is. The goal is to have no gaps when the bread is sealed around the fillings.
    Step 5 – Top with the remaining lettuce and the pickled red onions.
    Step 6 – Spread mayo or creamy Italian dressing on the bottom half of the bread, then place it on the sandwich.

    Step 7 – Carefully flip the stuffed Italian loaf, add 4 toothpicks evenly spaced through the bread, and then slice the picnic loaf to make 4 individual stuffed sandwiches.

    TIPS FOR MAKING THE BEST ITALIAN STUFFED PICNIC LOAF

    • Don’t skip hollowing the bread. It makes room for the fillings and helps everything stay packed together when slicing.
    • Wrap and rest if you can. Even 30–60 minutes helps the flavors meld and makes cleaner slices.

    Notes

    This sandwich is perfect to make ahead. Wrap it tightly with plastic wrap and refrigerate for a few hours so the flavors meld and it slices even cleaner. Going light on the oil, vinegar, and mayo will prevent it from getting soggy.
