- 1 loaf bread
- 1 tsp olive oil
- 2 tsp red wine vinegar
- ⅛ tsp salt

- ¾ cup iceberg lettuce, sliced thin, divided

- 1 loaf bread unsliced
- 1 tsp olive oil
- 2 tsp red wine vinegar
- ⅛ tsp salt
- ⅛ tsp garlic powder
- ⅛ tsp pepper
- 1 tomato sliced thin
- ¾ cup iceberg lettuce sliced thin, divided
- ¼ lb provolone cheese
- ¼ lb pepperoni
- ¼ lb genoa salami
- ¼ lb mortadella
- ¼ lb sweet capocollo
- 2 tbsp pickled red onions or thinly sliced red onion or pickles
- 1 tbsp mayo or creamy italian dressing
Instructions
- Slice the loaf of bread in half horizontally. Hollow out the soft interior to create space for the fillings, leaving about ½” of crust.
- Drizzle the inside of the top half of bread with olive oil and red wine vinegar. Season with salt, garlic powder, and black pepper.
- Start layering the fillings on the bottom half of the loaf. Add tomato slices and half of the shredded lettuce.
- Layer on the provolone, pepperoni, Genoa salami, mortadella, and sweet capocollo. You may want to add 2-3 layers of each, depending on how thick the loaf of bread is. The goal is to have no gaps when the bread is sealed around the fillings.
- Top with the remaining lettuce and the pickled red onions.
- Spread mayo or creamy Italian dressing on the bottom half of the bread, then place it on the sandwich.
- Carefully flip the stuffed Italian loaf, add 4 toothpicks evenly spaced through the bread, and then slice the picnic loaf to make 4 individual stuffed sandwiches.
