    Grilled Romaine Lettuce With Chicken

    Here’s an unbelievably satisfying salad platter you have to try. It’s my Grilled Romaine Salad with Everything Bagel Chicken Breast. Make it for a crowd and serve it as a dinner size salad. I’m breaking down every single step so you can make it perfectly. Let’s whip it up.

    Croutons

    • Sourdough bread, diced 1”
    • Olive oil
    • Seasonings: salt, garlic salt, Italian seasonings

    Chicken breast with everything bagel seasoning

    • 2 chicken breasts
    • 2 tbsp everything bagel seasoning
    • 1 tbsp olive oil
    • ½ cup chicken broth

    Grilled romaine lettuce

    • Romaine lettuce (about 1-2 lettuce halves per person)
    • Olive oil
    • Salt and pepper

    Simple pesto dressing + final salad preparation

    • Pesto (premade or homemade)
    • Marinated red pepper, diced
    • Vinegar, champagne or white wine
    • Carrot
    • Parmesan cheese
    • A squeeze of lemon juice (optional)

    This is a great family-style salad to serve as an appetizer with small bowls or salad plates.

    How to make croutons in the oven

    Mix all crouton ingredients together in a large bowl. Transfer to a parchment paper lined baking sheet and bake at 400°F until toasted, about 10 minutes.

    How to make chicken breast with everything bagel seasoning

    1. Prep chicken breast.

    Butterfly the chicken breasts to make them about 1-2” thick. This means, spread them out on a cutting board, and slice them in half to make them about half as thick. Season chicken with everything bagel seasoning blend.

    2. Sear and simmer chicken breast in the pan.

    Turn a large pan on the stove to medium high heat. Add olive oil. When oil is hot, add everything bagel seasoned chicken breast.

    Sear for 3-5 minutes on each side, until they are lightly browned.

    Add chicken broth, and add a lid. Simmer for ~5-10 minutes until the chicken reaches 165 degrees F as measured by an internal temperature read thermometer. 

    3. Add liquid as needed.

    The liquid in the pan should reduce during this time, but if the liquid is completely gone and the chicken isn’t cooked through yet, add a little more water (2-3 tbsp at a time), until the chicken is cooked. 

    4. Rest and slice.

    Once done, turn off the burner and let chicken rest in the pan about 10 minutes before slicing. This will help the juices stay in the chicken.

    How to grill romaine lettuce

    1. Slice romaine heads of lettuce in half, lengthwise so it stays intact but becomes two pieces. Secure halves together with toothpicks if needed. Brush cut sides with olive oil. Sprinkle it with salt and pepper. 
    2. Heat a grill pan or BBQ grill to medium high. Once hot, add lettuce, seasoned side down. Move the angle of romaine lettuce halfway though, if desired, to create perpendicular grill marks. This will take about 10 minutes. My preference is to only grill the sliced side, but you can grill romaine lettuce on both sides if desired.

    How to make the pesto dressing for grilled romaine

    1. Whisk together ingredients for salad dressing (pesto, diced marinated red pepper, vinegar). 
    2. Assemble salad with lettuce, sliced chicken, carrot ribbons, croutons, dressing, and a sprinkle of parmesan cheese.

    What’s the difference between romaine lettuce and romaine hearts?

    Romaine hearts are the center of the lettuce, the pieces that are yellow. The texture and crispness of both parts of a head of romaine are perfect for caesar salads and this chicken salad recipe. I use both the inside hearts of romaine and the outside green romaine leaves for this recipe.

    Can you use other cuts of chicken for romaine salads?

    Yes, this grilled romaine salad recipe can be made with chicken tenders / fingers or baked chicken thighs. Always check the chicken has reached a safe temperature and isn’t pink inside. You can also make this salad with shredded  crock pot whole chicken. And it’s so perfect with leftover smoked chicken).

    What brand of everything bagel seasoning should I use?

    You can use any brand you happen to have in your cupboard. If you’re going shopping, my favorite is Trader Joe’s Everything but the Bagel seasoning. 

    What does everything bagel seasoning contain?

    Everything bagel seasoning contains sea salt, sesame seeds, poppy seeds, dried garlic and dried onions. If you’d like to make your own version from scratch, buy the ingredients in bulk and mix them up.

    What can I serve with romaine salad?

    This romaine chicken salad recipe makes a perfect stand alone meal— but if you’d like some extras, consider serving it with chilled zucchini soup and homemade focaccia bread.
