    WHY YOU’LL LOVE MY GRILLED MANGO ICE CREAM

    This grilled mango ice cream is everything summer should taste like! You’ll love it because:

    1. It’s got that smoky-sweet flavor from caramelized mango.

    3. It’s a fun twist on classic homemade ice cream that impresses everyone.

    I was inspired to grill mango after a backyard BBQ — the char brought out such bold flavor, I had to see what would happen if I turned it into dessert. Spoiler: it’s even better than I imagined.

    INGREDIENTS TO MAKE A GRILLED MANGO ICE CREAM

    • Mango: Use a ripe, juicy mango for the sweetest flavor and easiest caramelization on the grill.
    • Cinnamon: Adds a warm, subtle spice that pairs beautifully with the mango.
    • Whole milk: Helps the base stay creamy and smooth without being too heavy.
    • Granulated sugar: Sweetens the base and helps with the creamy texture when churned.
    • Heavy cream: Adds richness and body to the ice cream.
    • Half and half: Balances the richness of the heavy cream for a lighter finish.
    • Crushed graham crackers: Optional topping that adds crunch and a fun nod to mango pie or cheesecake.

    HOW TO MAKE GRILLED MANGO ICE CREAM

    The Gist: This recipe comes together by grilling fresh mango until caramelized, blending it into an ice cream base, and churning until smooth and creamy. It’s a simple mix of smoky, sweet, and tropical goodness.

    Step 1. Preheat the grill to medium heat. Toss the diced mango with cinnamon. Thread mango chunks onto skewers (if using bamboo, soak them in water for 30 minutes first).

    Step 2. Grill the mango. Grill mango over direct heat (move to indirect heat if they’re cooking to fast) for about 2–3 minutes per side, or until slightly charred and caramelized. Set aside to cool, then dice into smaller pieces.

    Step 3. Make the ice cream base. In a mixing bowl, whisk together the cold milk and granulated sugar until fully dissolved. Set up your stand mixer with the frozen KitchenAid Ice Cream Maker attachment.

    Step 4. Churn the ice cream. Pour the milk mixture into the ice cream maker bowl. Add the heavy cream, half and half, and vanilla extract. Churn for about 10 minutes, or according to your machine’s instructions.
    Step 5. Add grilled mango. Add the chopped, grilled mango to the ice cream and continue churning until well combined. If your machine has a designated time or method for add-ins, follow that.

    Step 6. Freeze and serve. You can enjoy it immediately as soft-serve, or transfer to a freezer-safe container and freeze for 2–4 hours for a firmer scoop. Top with crushed graham crackers for an extra crunch.

    Ingredients

    For the grilled mango filling

    • 1 large mango ripe, peeled and cut into large chunks
    • ½ tsp ground cinnamon

    For the ice cream base

    • 1 cup whole milk very cold
    • ¾ cup granulated sugar
    • 1 cup heavy cream cold
    • 1 cup half and half cold
    • 1 tsp vanilla extract

    Optional topping

    • 4 graham crackers crushed

    Instructions
