Ingredients
- 1 beef chuck steak about 1-2" thick
- 1 tablespoon barbecue rub
- 2 teaspoons barbecue sauce optional – adds flavor
- 2 teaspoons olive oil to grease the grill
Instructions
- Prep the Steak. Season the chuck steak on all sides with barbecue rub. If using, lightly coat with barbecue sauce for added flavor. (Alternatively, skip the sauce and use a little olive oil instead) Insert a wireless meat thermometer into the center of the steak.
- Preheat the Grill. Set up a two-zone grill: A direct heat side: with flame directly under it (the goal is high heat (~500°F). And an indirect heat side: Burner off (no flame)
- Sear the Steak. Place the steak directly over high heat. Sear for 3–4 minutes with the lid closed.
- Flip & Continue Cooking. Flip the steak once it releases easily from the grates. Sear the second side for another 3–4 minutes.
- Finish Over Indirect Heat (If Needed). If the outside is well-seared but the inside isn’t at temp yet, move the steak to the indirect heat side and continue cooking until done.
- Check Doneness. Cook to an internal temperature of 125°F for a perfect medium-rare. (Remove from the grill slightly before your target temp if you prefer carryover cooking.)
- Rest & Serve. Remove the steak from the grill and let it rest for 5–10 minutes before slicing.
