- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- ½ teaspoon salt
- ¼ teaspoon black pepper

- 2 tablespoons red onion diced
- 1 large avocado sliced
- 1 cup cherry tomatoes halved
Balsamic vinaigrette
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Grill the chicken with your favorite seasonings (I used salt, pepper, and garlic powder) until cooked through and juicy. Let rest 10 minutes, then slice thin.
- Whisk together the vinaigrette: olive oil, balsamic vinegar, salt, and pepper.
- In a large serving bowl or platter, add the mixed greens as your base.
- Top with sliced chicken, mango, red onion, tomatoes, and avocado.
