- 4 strips of bacon
- 4 slices white bread
- ⅔ cup gruyere cheese, shredded
- ⅔ cup cheddar cheese, shredded
- 1 tablespoon butter

How to make grilled cheese on the griddle
- Cook the bacon on a griddle set to medium or medium-high heat, brushed with a thin layer of oil. Flip regularly until browned and crisp. Adjust heat as needed to prevent burning. Once done, transfer bacon to a paper towel to drain excess grease. Use a scraper to push any remaining bacon bits to the side, you will griddle the grilled cheeses in the bacon grease.

- Assemble the grilled cheese sandwiches: Lay out 2 slices of bread and evenly distribute most of the gruyere and cheddar cheese on each slice. Add a layer of cooked bacon on top, then sprinkle the remaining cheese to help bind everything together. Top with the remaining bread slices.

- Heat the griddle to medium heat and add butter. Once melted, place the assembled sandwiches directly onto the griddle, allowing them to cook until golden brown on the outside, with the cheese melted. Flipping regularly to ensure even cooking.
- Serve hot and enjoy your delicious griddled grilled cheese with bacon
