TIPS FOR MAKING THE BEST GRILLED BBQ CHICKEN KABOBS
- Cut evenly. Keep chicken and veggies similar in size so everything cooks evenly.
- Don’t skip oil. Lightly coat veggies so they don’t dry out or stick. Also oil the grill before grilling.
- Rotate consistently. Turn every 3–4 minutes for even char on all sides.
- Use two-zone heat. Sear over the flame (direct heat), then finish on the side of the grill without a burner turned on (indirect heat) if needed.

Grilled BBQ Chicken Kabobs

Ingredients
- 1.25 lb chicken breast
- 1 yellow onion
- 10 cherry tomatoes
- ⅓ cup BBQ sauce
- 1 tbsp olive oil
- 1.5 tbsp BBQ rub
- 2 tsp olive oil for grill
Instructions
- Cube chicken breast into 2–3-inch bite-sized pieces and add to a bowl.
- Dice the onion into large chunks of similar size, separate the layers, and add to a separate bowl.
- Season the chicken by coating it evenly with BBQ sauce.
- Prep the vegetables by tossing the onion and cherry tomatoes with olive oil, then season with BBQ rub and mix until evenly coated.
- Build the skewers by alternating chicken, onion, and tomatoes until all ingredients are used. If time allows, let skewers marinate for 30 minutes up to overnight.
- Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking. For best results, set two burners to high for direct heat and leave one burner off for indirect heat.
- Grill the kabobs directly over the flame for about 15 minutes, turning a quarter turn every 3-4 minutes. Keep the lid closed while grilling and begin checking the internal temperature as they near doneness.
- When the chicken reaches an internal temperature of 165°F, remove from the grill. If the outside is nicely charred but the inside isn’t fully cooked, move the skewers to the indirect heat side (no flame below) to finish cooking without burning. Rest for a few minutes before serving. Note: metal skewers will remain hot.
