Ingredients
- 1 LB strawberries, diced 1” chunks
- ¼ cup honey
- 1 cup granulated sugar
- ¼ tsp cinnamon, ground
- 1 medium lemon, juice
- ½ cup chocolate chips, smashed
- 2 cups heavy cream
- 1 cup half and half
- ½ tsp vanilla extract

How to make fresh strawberry ice cream
- Combine strawberries, honey, sugar, cinnamon, and lemon juice in a medium pot over medium-low heat. Simmer for 10-15 minutes, gently crushing strawberries until juicy and softened. Mixture should be reduced in half and thickened like a jam. Remove from heat. Optional: if you want “smooth” strawberry ice cream, without chunks, blend strawberries when cooled a bit.
- Pour strawberry mixture into your KitchenAid ice cream mixer, or whatever you’re using. Get it started so it cools about 5 minutes before adding in the rest of the ingredients.
- In a large bowl, mix together the chocolate, heavy cream, half and half, and vanilla extract.
- Pour ice cream and chocolate batter into your KitchenAid ice cream mixer, or whatever you’re using. Churn for 20-30 minutes. Enjoy immediately (it will be soft-serve style), or freeze it a few hours to harden it. Enjoy!
