Oat Crumble
- 1 cup flour

- 5 cups cherries fresh, pitted and halved (about 1 lb)
- 3 cups peaches fresh, peeled, diced
- ¾ cup sugar
- ⅓ cup cornstarch
- 1 teaspoon vanilla extract
- 1 lemon zest
- 2 tablespoons fresh lemon juice
For Serving
- Vanilla ice cream
- Additional diced fresh fruit
Instructions
- Preheat the oven to 350°F. Pop cubed butter in the freezer for 5-10 minutes. Grease a 9×13 baking dish. Set aside.
- In a large bowl, combine the oat topping ingredients: flour, oats, brown sugar, cinnamon, baking soda, and salt. Add the cubed butter and squeeze the mixture together with your hands, working quickly, until all the dry ingredients are absorbed in the butter and a coarse oat crumb forms. Pop crumb in the fridge to stay cool.
- In another bowl, gently mix pitted cherries, diced peaches, sugar, cornstarch, vanilla extract, lemon zest, and fresh lemon juice. Let the fruit mixture sit for 10–15 minutes to release its juices and thicken slightly.
- Using a slotted spoon, transfer the fruit to the prepared baking dish, leaving excess liquid behind to prevent a watery filling. Spread evenly in a layer on the bottom.
- Sprinkle the crumble topping evenly over the fruit.
- Place the baking dish in the oven at 350°F and bake for 40–50 minutes, until the topping is golden brown and the filling is bubbling around the edges.
- Fruit will be hot. Let it cool for 20-30 minutes or until it’s ready to eat. Serve with vanilla ice cream and more fresh fruit as desired.
