- 1 ¾ cups all-purpose flour
- ¼ cup white sugar
- ¼ cup brown sugar
- 2 ¾ teaspoons baking powder
- ½ teaspoon salt
- 1 ½ teaspoons ground cinnamon (divided – 1 tsp for batter, ½ tsp for apples)
- 1 ½ cups peeled, diced apples (about 2 small red or green apples)

Ingredients
- 3 medium ripe bananas or 4 small
- 1 teaspoon vanilla extract
- 2 large eggs whisked
- ⅓ cup salted butter melted and cooled
- 1 ¾ cups all-purpose flour
- ¼ cup white sugar
- ¼ cup brown sugar
- 2 ¾ teaspoons baking powder
- ½ teaspoon salt
- 1 ½ teaspoons ground cinnamon divided – 1 tsp for batter, ½ tsp for apples
- 1 ½ cups apples peeled and diced (about 2 small red or green apples)
Instructions
- Prep the pan. Line a loaf pan with parchment paper and lightly spray with olive oil or nonstick spray. Preheat oven to 325°F.
- Mash the bananas. In a large mixing bowl, mash the ripe bananas until mostly smooth.
- Mix wet ingredients. Stir in vanilla extract, whisked eggs, and melted butter. Mix gently until combined.
- Mix dry ingredients. In a separate bowl, whisk together flour, white sugar, brown sugar, baking powder, salt, and 1 teaspoon cinnamon.
- Combine wet + dry. Gradually add the dry mixture into the wet mixture, stirring gently until just combined. Do not overmix.
- Prepare the apples. In a small bowl, toss diced apples with ½ teaspoon cinnamon. Reserve a handful of apples for topping.
- Fold in apples. Gently fold most of the cinnamon apples into the batter.
- Fill the pan. Pour the batter into the prepared loaf pan. Scatter the reserved cinnamon apple chunks on top.
- Bake. Bake at 325°F for 60–80 minutes, until the top is deeply golden brown and a toothpick inserted in the center comes out clean.
- Cool. Let the bread rest in the pan for 20–30 minutes (longer is better) before slicing and serving.
