How to make chicken fajitas on a griddle grill
Now I’ll walk you through it…
Quick look at recipe for griddle cooking chicken fajitas
- Prep fajita seasoning (or use store bought).
- Season chicken breasts all over with fajita seasoning.
- Preheat the flat top and start to griddle onions and peppers in one area.
- Griddle fajita chicken breasts until cooked thoroughly.
- Serve with cilantro, lime wedges, freshly smashed avocado, and any of your other favorite fajita sides like griddled corn on the cob or smoked corn on the cob.
Detailed recipe steps
- Prep fajita seasoning. Either mix together all the chicken fajita ingredients from the Sip Bite Go recipe listed on this recipe, or use store bought fajita mix.
- Prep fajita chicken breast meat by mixing it all over with fajita seasoning. We like to get in there and massage it into the chicken meat with our hands. Set seasoned fajita chicken in the fridge until it’s time to griddle fajitas.
- Preheat Traeger Flatrock, Blackstone Grill, or whatever indoor griddle or outdoor flattop you’re using to medium-high heat.
For this particular recipe, we like to heat all the burners and add specific ingredients to each section. The onions and peppers take up 1-2 burner areas, and the chicken breast takes up about 1 area.
- Start griddle cooking fajita vegetables first. To do this, add cooking oil or butter to coat the griddle and then drop the peppers and onions onto the heated griddle. Flip them around and season with salt and pepper.
- Griddle peppers and onions until they are soft and translucent, ~15 minutes.
Turn burner heat down to low when they are close to done (to keep the fajita veggies warm while you cook the chicken fajitas on another griddle burner).
- Griddle chicken breast for fajitas. To do this, add cooking oil or butter to coat the griddle and then drop the chicken breast in a flat layer onto the heated griddle. We like to keep the griddle burner heat on medium-high to medium.
Flip chicken around regularly so they don’t burn and so they sear all over. You can drizzle as needed with a little water or oil to prevent chicken from sticking to the griddle.
Chicken is done griddle cooking when the internal temperature reached 160 degrees F as read with an internal read thermometer.

Meat thermometer recommendations
Every home chef needs a reliable meat thermometer to cook food perfectly.
On Sip Bite Go, you’ll often see me using:
- Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
- ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill.
It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.
How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
