- 2 bunches broccoli rabe (rapini)
- 2 tbsp olive oil
- 1 tsp garlic salt
- ½ tsp crushed red pepper
- ¼ tsp black pepper, fresh ground
- 8 oz asiago cheese, freshly grated
- 1 tsp fresh lemon juice

How to grill broccoli rabe with asiago cheese
The gist: Season up a couple bunches of broccoli rabe then char it on the grill. Melt in some gooey asiago cheese, and you have a quick and easy BBQ side.

1. Prep
- Trim 1-2 inches from the bottom of the broccoli rabe stems. Keep most of the stems intact.
- In a large bowl, toss the broccoli rabe with 2 tablespoons of olive oil, 1 teaspoon of garlic salt, ½ teaspoon of crushed red pepper, and ¼ teaspoon of fresh ground black pepper. Mix until evenly coated.

2. Grill Broccoli Rabe
- Preheat your grill to medium-high, about 450°F. Place a cast iron skillet on the grill to heat up using indirect heat.
- Carefully oil the grill grates using an oiled paper towel held with tongs.
- Place the seasoned broccoli rabe directly on the grill grates. Grill for 5-10 minutes, turning occasionally, until the broccoli rabe is nicely charred. Move the grilled pieces to the preheated skillet to keep warm.

3. Add Asiago Cheese
- Once all the broccoli rabe is grilled, transfer it to the skillet. Move the skillet to direct heat so the flame is directly below it.
- Sprinkle 8 ounces of freshly grated asiago cheese over the top.
- Pour any remaining seasoned olive oil from the bowl over the broccoli rabe.
- Close the grill lid and cook for another 5-10 minutes, until the cheese is melted and slightly crispy.

4. Final Touch
- Remove the skillet from the grill and drizzle the broccoli rabe with 1 teaspoon of fresh lemon juice.
- Serve immediately while the cheese is warm and gooey. Enjoy!
