    This recipe was totally inspired by one of our backyard burger nights that got a little extra. I had leftover puff pastry, and boom—these were born. Perfect for making ahead and popping in the oven or grill when friends show up hungry.

    INGREDIENTS

    • Ground beef: Go for 80/20 for the juiciest filling that won’t dry out when baked or smoked.
    • Onion: Yellow or white onions work great—dice them small so they melt into the beef.
    • Ketchup & mustard: These bring in classic burger flavor—use your favorites.
    • Garlic powder or BBQ rub: Adds depth; a smoky BBQ rub is extra tasty if you’re using a pellet grill.
    • Puff pastry: Look for it in the freezer section—make sure it’s thawed but still cold for best results.
    • Egg: Used for brushing the pastry so it turns shiny and golden while baking.
    • Sesame seeds: Totally optional, but they give that burger bun vibe on top.
    • Dipping sauce ingredients: Ketchup, mayo, a little sugar, and pickle juice or relish—this brings the whole bite together with tangy, creamy flavor.

    POPULAR SUBSTITUTIONS & ADDITIONS

    • Ground turkey or chicken: A leaner option that still tastes great with the burger-style seasoning.
    • Cheese: Add a small cube of cheddar or American inside each bite for a melty surprise.

    • Crescent roll dough: In a pinch, this can be used instead of puff pastry for a softer, breadier texture.

    HOW TO MAKE A BURGER PUFF PASTRY BITE

    The Gist: These bake (or smoke) up golden and delicious in under 30 minutes. You’ll mix the filling, prep the pastry, wrap them up, and cook until perfectly puffed and golden.

    Step 1: In a large bowl, combine the ground beef, chopped onion, ketchup, mustard, salt, pepper, and garlic powder (or BBQ rub).

    Step 2: Mix everything together using your hands until fully combined.
    Puff pastry on parchment paper, cut into three long strips.
    Step 3: Unfold one sheet of thawed puff pastry on a large piece of parchment paper and cut it into thirds along the fold lines. Return unused pieces to the fridge to keep them chilled.

    Step 4: Roll out each strip slightly longer and wider using a rolling pin. The shape doesn’t have to be perfect.

    Step 5: Add a line of the filling down the center of each strip, then fold the dough over and pinch to seal the edges.

    Step 6: Place the sealed rolls seam-side down, then slice into bite-sized pieces. Brush each with egg wash and sprinkle with sesame seeds if using.

    HOW TO SMOKE THEM

    Preheat your pellet grill (like a Traeger) to 375°F. Place the prepared bites on a parchment-lined tray or directly on a baking-safe cooling rack to allow airflow. Smoke for about 25–30 minutes or until golden brown and the beef is cooked through. Let cool slightly before serving.

    HOW TO BAKE IN THE OVEN

    Preheat your oven to 400°F. Arrange the assembled bites on a parchment-lined baking sheet. Bake for 20–25 minutes or until puffed up and golden brown. The internal temperature of the beef should reach at least 160°F. If the pastry isn’t golden brown when the meat is done, raise the oven temp to 425°F and bake for an extra 3 minutes. Let rest a few minutes before serving.

    To make the sauce, simply stir together the ketchup, mayonnaise, sugar, black pepper, and pickle juice in a small bowl until smooth and well combined.

    TIPS FOR MAKING THE BEST BURGER PUFF PASTRY BITES

    • Don’t Overfill. Use just enough filling to avoid the dough bursting open while baking or smoking. Less is more for easy sealing!
    • Keep Pastry Cold. Make sure your puff pastry stays chilled while working with it. Cold dough is easier to handle and puffs up better.
    • Seal the Edges Well. Pinch the edges tightly to avoid any leakage. The better the seal, the fluffier the bites!
    • Watch the Cooking Time. Keep an eye on your bites while they bake or smoke. Overcooking can dry out the filling or make the pastry too brown.
    • Use Fresh Seasonings. Freshly cracked black pepper or garlic powder can make a huge difference in flavor. Go for high-quality seasonings!

    Ingredients

    For the burger filling

    • 1 pound ground beef
    • ½ medium onion chopped or diced
    • 2 tablespoons ketchup
    • 1 tablespoon yellow mustard
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • ½ teaspoon garlic powder or use your favorite BBQ rub instead

    For the dough

    • 1 package puff pastry 2 sheets, thawed but kept chilled
    • 1 large egg for egg wash
    • 1 tablespoon sesame seeds optional

    For the dipping sauce

    • ¼ cup ketchup
    • 2 tablespoons mayonnaise
    • 1 teaspoon sugar
    • ¼ teaspoon cracked black pepper
    • 2 tablespoons pickle juice or sweet relish if preferred

    Instructions

    How to Assemble

    • Start by making the filling. In a large bowl, combine the ground beef, chopped onion, ketchup, mustard, salt, pepper, and garlic powder or BBQ rub. Mix everything together using your hands until well combined.
    • Lay out a large piece of parchment paper. Remove one sheet of puff pastry from the package and keep the other in the fridge until you’re ready to use it. Puff pastry typically comes folded in thirds—use the natural fold lines as a guide and cut it into three strips. Take one strip out at a time and return the others to the fridge to stay chilled.
    • Using a rolling pin, roll each strip slightly longer and wider. The shape doesn’t have to be perfect.
    • Add a portion of the filling down the center of each rolled strip. Fold the dough over the filling lengthwise to form a log, then pinch the seam to seal. Flip it seam-side down and cut into bite-sized pieces. Place them on a parchment-lined baking sheet. Brush the tops with egg wash and sprinkle with sesame seeds if using.
