Here’s what you need to make corn on the cob on the Blackstone.
- 4 ears corn on the cob fresh or frozen, can cut in half like the Sip Bite Go recipe demonstration video
- 1 tbsp butter more or less as desired, or use avocado oil to grease the griddle
- ¼ tsp salt
- ⅛ tsp pepper
- ⅛ tsp garlic powder
- ⅛ tsp smoked paprika, or chili powder if you like it spicy
- 1 tsp cilantro freshly chopped (for serving)
- 1 tbsp butter (for serving)
- 2 tbsp cotija cheese (for serving)

How to make Blackstone Corn on the Cob
Now I’ll walk you through it…

- Prep corn on the cob.
- Cook corn on the cob in water.
- Preheat Blackstone Griddle to medium-low
- Season and griddle Blackstone corn on the cob until done.
- Finish griddled corn on the cob with toppings.

Detailed Recipe Steps…
- Prep corn on the cob. Start by removing the corn from the husk or defrost corn if using frozen.
- Simmer corn on the cob in a large pot of water until almost completely cooked (easy to pierce with a fork) for about 5 – 10 minutes. Corn floats, so rotate them while cooking (with tongs). Covering corn with a lid pot while it is cooking will help steam the top kernals that float above the water.
- Drain corn from water.
- Preheat one burner of the Blackstone to medium-low heat.
- Add butter to the hot Blackstone grill and spread it around the surface where you’ll add the corn.
- Add corn to the buttered Blackstone grill.
- Place corn on the cob directly onto the Blackstone griddle and cook for 2 – 3 minutes per side (~10 minutes total) flipping with a pair of tongs. Season Blackstone corn with salt, pepper, garlic powder, and any other seasonings you’d like while griddling. Drizzle with oil as needed if it starts to stick to the griddle.
- Remove griddled corn on the cob. When the corn is perfectly seared and seasoned on all sides, take them off of the griddle to cool.
- Finish griddled corn on the cob with butter and fresh chopped parsley on top and enjoy.

This might be the very BEST side dish for the flattop… It’s sweet and a bit salty from the yummy cotija cheese which I just can’t get enough of!

Of course the smoky flavor of your pellets / wood comes with smoking corn on the cob. However the small downside is that it will take around an hour to fully smoke corn.
On the other hand, griddled corn on the cob will be cooked much faster. Just a few minutes. You’ll also get a nice golden sear to your corn that you don’t get by smoking it.
Most certainly…YES, you can. As you see in this Sip Bite Go recipe, we left the corn on the cob. You could remove the corn from the cob if you’re looking to griddle it with additional vegetables.
You don’t need to cover corn on the cob with a dome with this recipe, because you already cooked the corn on the stove. This recipe just helps you finish it on the griddle. I love this method for preparing meals for a BBQ menu in advance.
It’s such an easy-going side dish, you can really use any of your favorite seasonings like spicy chipotle powder, BBQ rub (see my homemade pork rib rub), or Old Bay Seasoning!
