Detailed recipe steps
1. Divide ground beef. Divide the ground beef into ½ LB patties.
2. Shape burger patties. Since you’ll season the burgers on the griddle, you don’t need to add salt and pepper to the burger meat right now (unless you’d really like to).
So roll the burgers into balls, and then form them into patty / disk shapes.
The thinner you form them into patties, the better, because they plump up when the heat of the Blackstone hits them.
A good guide is to make them 2-3” wider than your burger bun
3. Chill burger meat in the fridge until it’s time to grill them.
4. Prep all Blackstone burger toppings in advance. This is a quick recipe and you’ll be ready to top the burgers soon. Get your burger cheese ready, too!
5. (optional) Grill onions and peppers for the topping. Since they take longer to cook than the burgers, get started on the veggie burger topping first.
See this guide to cooking peppers and onions on Blackstone griddle cooktops or this recipe for griddled onions.
6. Preheat Blackstone Grill to medium heat. We usually heat 1-2 burners so there is space for both the burgers and buns when they’re ready to get grilled.
7. Add half of the butter or oil to coat the griddle and spread it around with a spatula.
8. Griddle Blackstone burgers for ~3-5 minutes on the first side.
Add a sprinkle of seasoning and then the burger meat on top to the flattop.
Then sprinkle the top with more seasonings. Sear until the browned.
9. Flip burgers and sear the other side for ~3-5 minutes more, until they are 1-2 degrees below your desired done temperature. (see chart below)
10. Sear the edges. Since these are thick, half pound burgers, you’ll want to use tongs to lift the burger and sear the sides quickly to brown them as well.
11. Remove burgers from the Blackstone heat. For the medium-cooked Blackstone burgers in the Sip Bite go video demonstration, we transferred the burgers off the grill when they reached 140 degrees F (measured with an internal read thermometer).
12. Flip burgers and finish to done temp (see chart below to find your desired Blackstone burger temp).
13. Griddle buns on the Blackstone, if desired. You can add a little butter to the griddle and place the cut sides of the burger buns down on medium-low or medium heat.
Griddle a couple minutes until browned to your liking.
14. (optional) Melt cheese on burgers. You’ll want to do this quickly in under a minute, so you don’t overcook the burgers.
15. Assemble and top burgers with onions and peppers or your favorite burger toppings.

Meat thermometer recommendations
Every home chef needs a reliable meat thermometer to cook food perfectly.
On Sip Bite Go, you’ll often see me using:
- Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
- ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill.
It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.
How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
FAQs
When you smoke burgers, you’re using wood or pellets as your heat source. Smoking burgers is a slower cooking method. Check out my smoked burger recipe for something super tasty.
On the other hand, griddled burgers are cooked on a high heat flattop. The cooking process is much faster, your burgers will have a crusty sear and will be done in 10 minutes.
These ½ pound burgers will take 10 – 12 minutes to finish at a medium temperature of 145 degrees F.
I recommend cooking burgers using the medium heat setting on the Blackstone griddle. If you use the high setting, you take the risk of burning the burgers before they’re done cooking.
Yes, using a Blackstone is great for cooking burgers because you can cook a lot of burgers at once using the entire flattop. Additionally, the Blackstone provides an evenly hot surface so your burgers will have a good sear with a juicy center that isn’t overcooked.
