- 1.5 cups BBQ Pork, cooked, shredded, and warmed
- ½ cup carrots, freshly shredded
- 12 egg roll wrappers
- 1 egg, whisked
- 1 tbsp olive oil, spray or regular
- ½ cup sweet and sour sauce (for serving)

How to make crispy BBQ Pork Egg Rolls
The gist: Mix shredded BBQ pork and carrots, roll in egg roll wrappers, air fry, and enjoy with sweet and sour sauce.
Step 1: Prepare the filling
In a large bowl, mix together 1.5 cups of cooked, shredded BBQ pork and ½ cup of freshly shredded carrots.
Step 2: Wrap the egg rolls
- Lay an egg roll wrapper flat on your work surface with a corner pointing towards you.
- Add about 2 tablespoons of the pork and carrot filling to the bottom corner of the wrapper.
- Fold the bottom corner up over the filling, then roll halfway towards the center.
- Brush the open half with a whisked egg.
- Fold the two sides in.
- Finish rolling the wrapper tightly away from you, like a burrito, until fully wrapped and sealed.
Step 3: Air fry the egg rolls
- Preheat your air fryer to 400°F.
- Lightly spray or brush the air fryer basket with olive oil to prevent sticking.
- Place the egg rolls in the basket, making sure they’re not touching. Give the tops a light spray of olive oil as well.
- Cook the egg rolls for 6 minutes, then flip them over, spray again, and cook for another 6 minutes. This ensures they turn out crispy and golden brown on all sides!
Step 4: Serve and enjoy!
Once your egg rolls are done, let them cool slightly before serving. Pair them with sweet and sour sauce for dipping – it’s the perfect combo!
