    Baked Barramundi Fish Toasts with Red Pepper and Corn Salsa

    This recipe for baked barramundi fish toasts with red pepper and corn salsa has quickly become one of my favorite white fish appetizers using baguettes. With the growing popularity of barramundi fish recipes available, I wanted to create a pretty, but simple, make-ahead fish hors d’oeuvres recipe. This fish app starts with a garlic crostini toast, then a layer of ridiculously-easy red pepper and corn salsa, and finally, the star of the show: a bite of lemon herb butter Australis Barramundi. Let’s get cooking!

    Ingredients for this baked barramundi toast recipe

    This barramundi fish recipe utilizes pre-marinaded lemon herb butter Barramundi as a short-cut. The base of the fish toasts is a garlic baguette layered with a pepper, onion and corn salsa that takes just a few minutes to whip up on the stove.

    All of the ingredients can be made in advance and quickly assembled – making this a great fish party appetizer.

    How to make barramundi fish toasts – step by step

    First, prepare the salsa.

    Over medium heat, add diced red pepper and onion to a large pan. Add oil, salt and pepper.

    Stir regularly for 6-8 minutes, until onions soften and begin to become transparent. Add corn and butter to the salsa. Stir for 3-5 minutes until corn is heated. Set aside.

    To make the garlic crostini toasts, preheat oven to 425 degrees.

    Arrange baguette slices on a pan lined with parchment paper. Mix together garlic, salt, pepper and olive oil. Brush baguette slices with garlic mixture. Bake for 5 minutes at 425 until toasts are lightly golden brown.

    One package contains three Australis Barramundi fish fillets. Each fillet is cut in four pieces, so this recipe makes twelve fish toast appetizers.

    How to bake barramundi fillets

    The barramundi is so simple to cook. Starting with the lemon herb butter flavor by Australis, you don’t even need to season the fish. It goes straight to the oven from frozen.

    The lemon herb butter barramundi bakes at 425 degrees for 22 minutes on a parchment linen pan in the oven.

    How to assemble barramundi toasts

    First, top garlic toasts with a layer of salsa.

    Cut each fillet of barramundi into four pieces (one 12 oz package of Australis Barramundi creates twelve fish toast appetizers).

    Add barramundi to toasts.

    Drizzle with balsamic, and top with a sprinkle of basil.

    I think these barramundi fish toasts look so pretty topped with entires basil leaves. I just pinch the smallest pieces of basil off the stem and stick them on top.

    Is barramundi sea bass?

    Yes, barramundi is a sea bass with qualities similar to wild coho salmon because it has one of the highest omega-3 levels of any widely available white fish.

    What does barramundi fish taste like?

    Similar to grouper and halibut, barramundi is a mild white fish with a clean, buttery flavor. Barramundi is a very lean protein and has a meaty texture, which is why it appeals to non-fish lovers as well as seafood enthusiasts. And, bonus points: Australis Barramundi has no mercury and no antibiotics, and uses sustainable ocean farming practices.   

    Where to buy barramundi

    Whole Foods carries three varieties of Australis Barramundi: All-Natural Skinless Fillets, Lemon Herb Butter Fillets, and Garlic Teriyaki Glazed Fillets. I used the Lemon Herb Butter barramundi for this recipe.

    How to cook frozen barramundi

    Using Australis Barramundi, a fish frozen at peak freshness, makes it easy to whip up this white fish appetizer. Starting with pre-marinaded frozen fillets, all you do is place them on a parchment paper lined baking sheet, and pop them in the oven.

    Tasty tips and notes for making these baked barramundi fish toasts

    • One package of barramundi creates twelve fish toast appetizers. One package of Australis Barramundi fish has three fillets, and each fillet is cut into four pieces for this recipe.
    • Working with pre-marinaded barramundi is a great shortcut for this recipe. Australis barramundi comes in three varieties: original, lemon herb butter, and garlic teriyaki glazed.

    Barramundi

    • 1 package Australis Barramundi lemon herb butter flavor

    Garlic toasts

    • 1 baguette
    • 2 tbsp olive oil
    • 1 tsp salt
    • ½ tsp pepper
    • 1 tbsp garlic minced
    • 1 tsp Balsamic glaze (optional)
    • 1 tbsp basil fresh (optional)

    Instructions

    • Cook barramundi as instructed on package... From frozen, bake lemon herb butter barramundi at 425 degrees for 22 minutes on a parchment linen pan in the oven.
    • Assemble barramundi toasts. First, top garlic toasts with a layer of pepper, corn, and onion salsa. Cut each fillet of barramundi into four pieces (one package of three Australis Barramundi fish creates twelve fish toast appetizers). Add barramundi to toasts, drizzle with balsamic, and top with basil.

        Barramundi is a white fish. It’s seabass that’s more like a salmon. They sell it at whole foods.

      Barramundi is a new fish for me, but it sounds like one I would like. I prefer light, white fish that don’t taste too fishy. I never thought of putting it on bread like this, it’s such a great idea!
